This vegetable temptation tastes best when made with farm fresh peppers but you probably already knew that.

peppers - 10, Sivri
eggs - 3
feta cheese - 9 oz (250 g)
green garlic - 1 bunch
breadcrumbs - 2 tbsp
tomatoes - 3.5 lb (1.5 kg)
garlic - 4 cloves
parsley
oil
salt

Steps:

  • Wash the peppers, dont remove their stems. Cut out a long, narrow strip from each pepper. Remove the seeds from the opening. Cut the strip into pieces and stuff the pepper with it. Grate or mash the feta cheese, mix it with the eggs, chopped green garlic bunch, breadcrumbs and parsley.
  • Smear each pepper on the inside and fill with the mixture. Pour 2/5 cup (100 ml) water into an oven dish and arrange the peppers in it. Pour in a little oil between them and bake in a preheated 356°F (180 °C) oven to a nice crisp.
  • Peel the tomatoes and chop them finely. Fry them with the chopped garlic and parsley until the water boils off. Salt to taste and transfer to the oven dish with the peppers.
  • Arrange the prepared peppers and sprinkle with parsley

chicken legs - 8 - 10
sivri peppers - 3
puff pastry - 10.5 oz (300 g)
salt
teriyaki sauce

Steps:

  • Wash and clean the chicken legs. Season them with salt.
  • Marinate them with the sauce and bake in the oven until semi-cooked. Let them cool.
  • Cut the sivri peppers into strips. Roll out the puff pastry and cut it into strips.
  • Put a pepper piece onto each chicken leg and wrap it with a strip of puff pastry.
  • Put the chicken legs back in the hot oven and bake until golden.

  • Soak the beans in water the night before you wish to cook. The following day drain and place in a saucepan with enough water to completely cover and cook on a low boil for around 30-45 minutes. Remove with a slotted spoon any foam that may rise. When the beans have softened but still have a little bite, they are ready to cook in the sauce. As the beans come to the end of the cooking, take a medium frying pan and heat a little olive oil. Place the chopped onions into the oil along with the salt and fry until golden. (You may wish to add a little water to prevent them from catching)   Once golden, add in the chopped peppers and fry until softened.  Stir in the pepper paste and the chopped tomatoes. Add the vegetables and salça to the cooked beans along with the spices and pekmez.   Cover the saucepan and turn to low heat for around 25-30 minutes or until a softness that you like. This will allow the flavours to balance and the tomatoes to cook down.  Around 10 minutes before serving, add the thinly sliced pastirma pieces. Serve as is or with rice/bulgur pilaf and pickles.
