almond flour 

1/4 c.

granulated stevia  (preferably Swerve)

2 tsp.

baking powder 

1 tsp.

kosher salt 

1/2 c.

(1 stick) butter, plus more for serving 

1/2 c.

almond butter

large eggs, separated 

2 tsp.

pure vanilla extract 

Cooking spray 

Sugar-free maple syrup, for serving 

Steps:

  • Preheat waffle iron to high. In a large bowl, whisk almond flour, stevia, baking powder, and salt until combined.  In a small microwave-safe bowl, melt butter and almond butter, stirring every 15 seconds. Stir melted butter mixture into dry ingredients until combined, then stir in egg yolks and vanilla.  In another large bowl, using a hand mixer, beat egg whites to stiff peaks. Fold whites into batter until just combined. Coat waffle iron with cooking spray. Add half of the batter, close the lid, and cook until golden, about 5 minutes. Transfer to a plate and repeat with the remaining batter. Top with butter and maple syrup.

heavy cream

1/2 c.

packed keto-friendly brown sugar, such as Swerve

large eggs, beaten

ground cinnamon

1/2 tsp.

ground ginger

1/4 tsp.

ground nutmeg

1/4 tsp.

ground cloves

1/4 tsp.

kosher salt

1 tsp.

pure vanilla extract

Whipped cream, for serving (optional)

Steps:

  • Preheat oven to 350°. In a large bowl, whisk together almond flour, coconut flour, baking powder, and salt. Add melted butter and egg and stir until a dough forms. Press dough evenly into a 9” pie plate, then use a fork to poke holes all over crust.  Bake until lightly golden, 10 minutes.    In a large bowl, whisk together pumpkin, cream, brown sugar, eggs, spices, and vanilla until smooth. Pour pumpkin mixture into par-baked crust.  Bake until filling is slightly jiggly in the middle and crust is golden, 45 to 50 minutes.  Turn off oven and prop door open. Let pie cool in oven for 1 hour, then refrigerate until ready to serve.  Serve with whipped cream, if desired.

Season with salt and pepper and cook, stirring occasionally, until soft, 5 minutes.
