2 tablespoons chopped onion
2 teaspoons chopped green pepper
3 tablespoons bacon drippings
1?½ cups small shrimp, peeled and deveined
1 cup plus 3 tablespoons water, divided
2 tablespoons all-purpose flour
1 tablespoon catsup
1 teaspoon Worcestershire sauce
½ teaspoon salt
¼ teaspoon pepper
Hominy

Steps:

  • Sauté onion and green pepper in bacon drippings until tender. Stir in shrimp; sauté 2 to 3 minutes. Add 1 cup water, and simmer an additional 2 to 3 minutes, stirring occasionally.
  • Combine flour and remaining water; mix well, and stir into shrimp mixture. Add catsup, Worcestershire sauce, salt, and pepper; stir well. Continue to cook over low heat until sauce thickens, stirring frequently.
  • Remove shrimp mixture to a warm serving bowl. Serve immediately with hominy.

2 fresh garlic cloves, minced
1 cup monterey jack and cheddar cheese blend
1 cup red bell pepper, diced
1 lb small shrimp, peeled
2 tablespoons butter, melted
salt
pepper
Italian parsley

Steps:

  • Preparation
  • Whip eggs with milk; pour into large mixing bowl. Add crackers, onion, garlic, cheese, bell pepper, shrimp, salt, pepper, and parsley; mix well. Put into greased 9x12-inch baking dish; pour butter over top. Bake at 350 degrees F for 30 minutes or until firmly set.

It is an interesting mixture of tastes that you wouldn't think would go together, but they do. This goes together very quickly, if you have everything ready to go. This sauce becomes sweet when you cook it. Also I made my own cocktail sauce, but you could use a pre-made sauce. You can cook the eggs in butter instead of oil if desired. Garnish with lemon and parsley.
