12 slices applewood smoked bacon or other thick-cut bacon
12 (U-10 size) sea scallops
2 tablespoons Essence, recipe follows
1/2 teaspoon salt
12 (6-inch) bamboo skewers, soaked in warm water for about 30 minutes
Freshly ground black pepper
2 tablespoons unsalted butter, at room temperature
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
  • Place the bacon strips on the parchment paper and bake until just beginning to get golden around the edges but still very pliable, 12 to 15 minutes. Remove from the oven and set aside until cool enough to handle.
  • Preheat a grill to medium-high heat.
  • Season the scallops on all sides with the Essence and salt. Wrap each scallop in 1 piece of the bacon, securing it through the center with a bamboo skewer. Repeat with the remaining scallops.
  • When the grill is hot, brush the grates lightly with oil, then place the scallops on the grill and cook, turning frequently, until just cooked through about 7 minutes total. Transfer to a platter and sprinkle with freshly ground black pepper to taste. Garnish each scallop with a dab of the butter and serve immediately.

1 pound dry sea scallops (about 16 medium)
1 clove garlic
1 1/2 medium lemons
4 tablespoons (1/2 stick) unsalted butter
1/2 teaspooon kosher salt, plus more as needed
1 tablespoon vegetable oil, plus more for the grill grates

Steps:

  • Prep the grill and skewers. If using wooden skewers, soak 4 in water for 1 hour. Prepare an outdoor grill for two heat zones, medium and medium-high. If using a charcoal grill, add coals, stacking more coals on one half of the grill and less on the other. If using a gas grill, heat one half of the grill to medium-high and the other to medium.
  • Prepare the scallops. Meanwhile, gently peel off the side muscle from 1 pound scallops if they are still attached. Pat the scallops dry with paper towels. Thread the scallops onto 4 skewers and refrigerate. Finely grate 1 garlic clove. Halve 1 medium lemon, then cut a second lemon into wedges for serving.
  • Make the browned butter. When the grill is ready, place a small saucepan with a heatproof handle on the grates over the medium heat zone, and add 4 tablespoons unsalted butter. Cook, swirling occasionally, until the butter is golden brown and nutty smelling, 4 to 5 minutes. Remove from the heat. Immediately add the grated garlic and the juice of 1/2 lemon. Taste and season with kosher salt and more lemon juice as needed; set aside.
  • Grill the scallops. Rub the grill grates on the medium-high heat zone with a paper towel dipped in vegetable oil. Season the scallops with 1/2 teaspoon kosher salt, then lightly brush with 1 tablespoon vegetable oil. Place the skewers on the oiled grill grates. Grill uncovered and undisturbed until dark grill marks appear on the bottom, about 3 minutes. Flip the skewers and grill until the scallops are just barely cooked through, 2 to 3 minutes more.
  • Serve. Transfer to a serving platter. Drizzle the scallops with the lemon-garlic butter over and serve with the lemon wedges.

  • 1. Preheat a gas or charcoal grill to a moderately hot temperature, about 400°F; if using coals, wait until they turn white-hot. 2. If desired, melt the butter in a large stockpot set over the grill or over moderate heat on a stove. Add the onion, crushed garlic, and a pinch of salt and pepper, sautéing until softened, 4-5 minutes. 3. Add the Old Bay seasoning and thyme leaves; cook and stir until fragrant, about 2 minutes. Stir in the water and bring to a boil over high heat. 4. Once boiling, reduce to a steady simmer and stir in the sausage and potatoes; return to a simmer and cook until the potatoes are just tender to the tip of a knife, 10-15 minutes. 5. Add the corn to the water and return to a simmer. Cook for 5 minutes and then remove from the stockpot and pat dry with paper towels. Set aside until needed. 6. Return the seafood boil to a simmer and stir in the crabs and lobster. Cover and cook for 10 minutes. 7. In the meantime, brush the corn with oil and season with a little salt and pepper. Place the corn on the grill and cook, turning a few times, until lightly charred all over, 6-8 minutes. Remove from the grill. 8. When the crab and lobster are ready, stir in the shrimp and clams. Cover and cook until the shrimp are opaque and the clams have opened, 4-5 minutes. 9. Add the parsley, lemon juice, and plenty of salt and pepper to taste to the seafood boil. Serve straight from the pot with grilled corn on the side and seafood boil sauce on the side. (See Tips for a seafood boil sauce.)
