This is a basic recipe for zucchini. Zucchini, because it is so abundant in summer, produces lots of recipes for "how to get rid of it". This one is for enjoying it for its own sake. The amounts for each ingredient are very flexible. Use your own judgement. It's hard to go wrong. Gardeners can avoid a glut of zucchini by harvesting it at its best, about the time the blossom drops from the fruit.

3 tablespoons olive oil
4 small zucchini
1/2 medium onion
1 medium tomatoes
fresh basil or dried basil, to taste
1/4 teaspoon crushed red pepper flakes, to taste
salt
parmesan cheese

Steps:

  • Cut the zucchini in bite size pieces.
  • Chop the onion.
  • Dice the tomato.
  • Heat the olive oil in a heavy skillet.
  • Saute the zucchini and onion until tender and lightly browned, about 20 minutes.
  • Add the rest of the ingredients and cook until the juices thicken a little, about 5 or 10 minutes.
  • Serve with grated parmesan cheese.

I love sauteed zucchini and caramelized onions. I had some leftover onions and tried them together for a delicious side dish.

Number Of Ingredients 13

5 zucchini, sliced
salt, to taste
black pepper, to taste
1 tablespoon(s) oil
1/2 tablespoon(s) butter
1/2 teaspoon(s) italian seasoning
3/4 cup(s) caramelized onions
CARAMELIZED ONIONS:
2 large onions, sliced into rings
1 tablespoon(s) olive oil
1 tablespoon(s) butter
3 tablespoon(s) cider vinegar
2 tablespoon(s) brown sugar

Steps:

  • Prepare Caramelized Onions.
  • Heat oil and butter in another skillet. Add zucchini and Italian seasoning and sauté until tender.
  • Stir in Caramelized Onions.
  • Adjust salt and pepper and serve warm.
  • CARAMELIZED ONIONS:
  • Melt butter into oil and swirl together. Add onion rings and cook over low heat until browned and translucent, about 15 minutes.
  • Add vinegar and brown sugar and stir until well-mixed.
  • Boil the mixture on medium-high heat and then simmer, uncovered and stir occasionally, for about 10 minutes, or until the liquid has evaporated and the onion has a deep color.
