1 tablespoon extra-virgin olive oil, 1 turn of the pan
2 tablespoons butter
1 1/2 pounds crimini mushrooms, brushed clean with damp towel
Salt and pepper
3 tablespoons fresh thyme leaves, chopped
1/2 cup dry red wine
2 tablespoons chopped fresh parsley leaves

Steps:

  • Heat a large skillet over medium high heat. Add extra-virgin olive oil and butter. Add mushrooms and season with salt, pepper and thyme then cook 15 minutes until evenly browned and tender. Add wine and deglaze the pan. Add parsley and transfer mushrooms to a serving dish.

2 tsp. extra-virgin olive oil
2 tbsp. butter
3 cloves garlic, roughly chopped
1 tbsp. freshly chopped rosemary
10 oz. shiitake mushrooms, woody stems trimmed and sliced 1/3"-thick
Kosher salt
Freshly ground black pepper
3 tbsp. water (or broth)

Steps:

  • In a large skillet over medium heat, heat oil and butter. Add in garlic and rosemary and stir briefly until fragrant, 30 seconds. 
  • Add in mushrooms and stir to coat evenly in butter. Season with salt and pepper, and continue cooking, stirring occasionally, until mushrooms are lightly golden, 6 to 8 minutes. Deglaze pan with water (or broth) and stir until fully evaporated. 
  • Season with more salt to taste and top with more herbs before serving, if desired.
