To save time, I oven-bake breaded or battered frozen fish (but if we had a deep fryer, I'd probably use it). I slice cabbage very thin, it works better for the tacos than shredded cabbage. Add your favorite tortillas, and you have an easy, crunchy, and great tasting meal. Prep time is just for making the sauce.

1/2 cup mayonnaise
1/2 cup sour cream or 1/2 cup Greek yogurt, plain
1 lime, juiced
1 tablespoon capers, minced to taste
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon dried dill weed
1/4 teaspoon cayenne pepper, to taste (optional)

Steps:

  • Blend mayo and sour cream (or yogurt) together; blend in lime juice, then capers, cumin, oregano, dill, and cayenne; it can be served immediately or can be made ahead.
  • I assemble my tacos by putting 1-2 fish fingers (depending on the size of tortilla), add a sprinkle of cabbage, a drizzle of sauce, then roll up.

The crust on this cod sticks perfectly, fried up golden brown and crisp. We've never had fried fish from Luby's so we can't speak to its authenticity... but we can say this is mighty good fried cod. There are not a lot of seasonings in the recipe, so the flavor of the fish shines. The homemade tartar sauce is the perfect complement to the fish. This makes a lot of tartar sauce. The recipe can easily be cut in half and you'll still have enough for dinner.

1 cup(s) all-purpose flour
2 1/3 cup(s) finely crush saltine crackers
1 cup(s) buttermilk
3 - xl eggs
1/2 teaspoon(s) salt
1/4 teaspoon(s) pepper
6+ - cod pieces (I use Kroger brand)
TARTAR SAUCE
1/4 cup(s) finely minced yellow onions
1/4 cup(s) finely minced fresh parsley, stems removed
1/2 cup(s) dill pickle relish, drained
2 cup(s) mayonnaise

Steps:

  • Place flour in a bowl and place crackers in another bowl. (Make sure bowls are big enough so you have enough space to coat fish.)
  • In a medium bowl, whisk together buttermilk, eggs, salt, and pepper.
  • Coat fish pieces with flour, shaking off excess.
  • Dip into buttermilk mixture.
  • Then crackers coating evenly and pressing crackers firmly onto fish.
  • Deep fry in oil (350-365) till done and golden brown.
  • For the tartar sauce: In a medium bowl mix onions, parsley, mayonnaise, and relish.
  • Using a rubber spatula, fold together mayonnaise and the onion mixture. Refrigerate to chill before serving. I always make the tartar sauce ahead of time so the flavors can blend.

    1. Peel and finely slice the garlic. Pick the basil leaves and tear into pieces.
    2. Place a large non-stick frying pan on the heat and pour in 4 generous lugs of olive oil. Add the garlic, shake the pan around a bit and, once the garlic begins to colour lightly, add the basil and the tomatoes. Using the back of a wooden spoon, mush and squash the tomatoes as much as you can.
    3. Season the sauce with sea salt and freshly ground black pepper. As soon as it comes to the boil, remove the pan from the heat.
    4. Strain the sauce through a coarse sieve into a bowl, using your wooden spoon to push any larger bits of tomato through. Discard the basil and garlic that will be left in the sieve, but make sure you scrape any of the tomatoey goodness off the back of the sieve into the bowl.
    5. Pour the sauce back into the pan, bring to the boil, then turn the heat down and simmer for 5 minutes to concentrate the flavours. It will be ready when it’s the perfect consistency for spreading on your pizza.
    6. Store the sauce in a clean jar in the fridge – it’ll keep for a week or so.

    1. Get a saucepan and a heatproof mixing bowl that will sit stably over the pan. Half-fill the pan with water and bring to a simmer. Turn down the heat as low as it can go but still have the water simmering.

    6. Season carefully with sea salt and black pepper, and loosen if necessary with little squeezes of lemon juice. Keep tasting the sauce until the flavour is to your liking.
