1 sleeve saltine crackers
1 c. butter (no substitutions)
1/2 c. granulated sugar
1/2 c. packed light brown sugar
2 tsp. vanilla extract
2 tbsp. cider vinegar
1/4 tsp. flaky sea salt

Steps:

  • Line large jelly-roll pan with aluminium foil; lightly coat with nonstick cooking spray. Arrange crackers on pan in single layer. In large microwave-safe bowl, microwave butter on high 1 minute, or until melted. Whisk in granulated sugar, brown sugar, vanilla, and vinegar until smooth. Microwave uncovered on high 6 minutes in 2-minute intervals, whisking thoroughly after each interval before returning to microwave. Microwave 1 to 2 minutes more or until dark amber (or until candy thermometer registers 320 degrees F). Carefully remove caramel from microwave; pour over crackers in pan. Spread caramel into thin layer using offset spatula; tap jelly-roll pan on flat surface to evenly distribute. Sprinkle with salt, if desired. Let cool 15 minutes, or until caramel hardens; break into pieces.

8 ounces mini pretzels
1 cup butter
1 cup light brown sugar
2 cups milk chocolate chips
sea salt to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line an 11x17-inch baking sheet with aluminum foil or parchment paper.
  • Spread pretzels onto the prepared baking sheet.
  • Combine butter and brown sugar in a saucepan over medium-low heat; cook and stir until sugar is dissolved and mixture is thickened, 5 to 8 minutes. Pour mixture over pretzels.
  • Bake in the preheated oven for 5 minutes. Sprinkle chocolate chips over pretzel mixture. Bake for 1 minute more. Stir mixture to evenly spread chocolate over pretzels. Lightly sprinkle salt over pretzels. Cool until set, 2 to 3 hours. Break into pieces.

  • Line a 9” x 5” loaf pan with parchment paper and spray generously with nonstick cooking spray. In a medium bowl combine butter and cream and microwave until butter is fully melted. Set aside. In a medium sauce pan over medium heat, combine water, vanilla, corn syrup, and sugar and stir gently stir to combine. Bring to a boil and place a candy thermometer inside your pan. Cook until the mixture is a deep golden color and reaches 320° F. Slowly add cream mixture into pot, stirring after each addition. This will bring the temperature of the mixture down dramatically. Bring the mixture back up to 240° and remove from heat. Pour into prepared baking pan. Let mixture cool 15 minutes before topping with flaky sea salt. Let cool 3 to 4 more hours before cutting into caramels and wrapping in wax paper.

  • Use softened unsalted butter to grease an 8x8 pan. Cut two strips of parchment paper to fit the pan, leaving an overhang on each side and buttering each piece. Set aside. Combine sugar, heavy cream, corn syrup, salted butter, and fine sea salt in a 3-quart saucepan. Stirring frequently, cook on medium heat until the butter melts and the mixture starts to boil. Clip on a candy thermometer. Continue cooking and stirring until the temperature reaches 245ºF. (This will take about 30 minutes.) Lower the heat as needed to prevent bubbling over. As soon as the mixture reaches 245ºF, remove from heat and stir in the vanilla bean paste (see note). Immediately pour into the prepared pan. Sprinkle the fleur de sel over the top. Let the caramels set for at least two hours and up to overnight. Lift the caramel out of the pan using the parchment paper. Cut into pieces using kitchen shears. Wrap individual caramels in pieces of waxed paper. Store at room temperature. Note: To make chocolate caramels, omit the vanilla bean paste. Stir together 1/2 teaspoon vanilla extract with 1/4 teaspoon espresso powder. Add this mixture plus 3 ounces melted unsweetened chocolate in place of the vanilla bean paste.
