CHINESE CHAR SIU CHICKEN WINGS RECIPE :: THE MEATWAVE

Chinese Char Siu Chicken Wings Recipe :: The Meatwave image

Sweet and complex char siu sauce give these wings a Chinese flavor profile that make them very unique from the standard wing.

Provided by Joshua Bousel

Total Time 9 hours 2 minutes

Prep Time 15 minutes

Cook Time 47 minutes

Yield 4-6 servings

Number Of Ingredients 15

For the Rub
1 tablespoons baking powder
1 tablespoon Kosher salt
2 teaspoons dark brown sugar
1 teaspoon Chinese five spice powder
1 teaspoon ground white pepper
3 pounds chicken wings, cut into drumettes and flats
For the Sauce
3 tablespoons hoisin sauce
2 tablespoons honey
2 tablespoons soy sauce
4 1/2 teaspoons Chinese rice wine or dry sherry
1 piece Chinese red fermented bean curd
2 teaspoons sauce from jar of Chinese red fermented bean curd
1/2 teaspoon Chinese five spice powder

Steps:

  • To make the wings: In a small bowl, mix together baking powder, salt, brown sugar, five spice powder, and white pepper. Place wings in a large bowl and sprinkle in spice mixture, tossing to evenly coat, until liberally seasoned. Arrange wings in a single layer on wire rack set inside a baking sheet lined with aluminum foil, leaving a little space between each wing. Place baking sheet with wings in refrigerator for 8 hours to overnight.
  • To make the sauce: In a medium bowl, whisk together hoisin sauce, honey, soy sauce, rice wine, fermented bean curd, fermented bean curd sauce, and five spice powder. Set aside.
  • Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange the coals on one side of the charcoal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Place wings on cool side of grill, cover, and cook until skins are crisp and browned, about 45 minutes.
  • Transfer wings to a large bowl. Add in sauce and toss to thoroughly coat wings. Place wings on hot side of grill and cook until sauce is thick and glossy, about 1 minute per side. Transfer wings to a platter and serve immediately.

Total Time 45 minutes

Prep Time 10 minutes

Cook Time 35 minutes

Yield 4 to 6 as an appetizer

Number Of Ingredients 12

16 whole chicken wings, flap segments removed and saved for stock
1/3 cup sake
1/3 cup soy sauce
4 tablespoons brown sugar (see Cook's Note)
3 tablespoons mirin
3 tablespoons oyster sauce
4 large thin slices fresh ginger
2 cloves star anise
1 dried hot chile
1 cinnamon stick
Shaved green onions, for garnish
Sesame seeds, for garnish

Steps:

  • Place a 14-inch nonstick saute pan over high heat. Add the chicken and dry-sear to lightly brown the chicken. Add the sake, soy sauce, 1/3 cup water, brown sugar, mirin, oyster sauce, ginger, star anise, dried chile and cinnamon stick and bring to a simmer. Cook, covered, about 12 minutes.
  • Uncover and simmer until the pan is almost dry, tossing frequently to coat the wings, 10 to 12 minutes. Skim off the fat if you like, and serve, garnishing with scallion shavings and sesame seeds. I like to emulsify the chicken fat into the sauce by turning up the heat at the last minute to boil the fat into the other liquids.
