SALMON PATTIES RECIPE : TASTE OF SOUTHERN
Southern Fried Salmon Patties: This is fish even the kids will enjoy eating. Simple, quick, easy to make, and tastes even better between two slices of bread or in a bun. Add a little mayo or whip up your own special sauce and you've got supper on the table in no time flat.

Steps:
- Open the canned Salmon and place in a colander in the sink to drain.
- Remove any large bones if not wanted. They are edible however.
- Flake the salmon with a fork.
- Place the flaked salmon in a large mixing bowl.
- Add two whole Eggs
- Add the chopped Onions and the chopped Bell Peppers
- Add the Corn Meal
- Add Salt
- Add Garlic Powder
- Add Mayonnaise
- Add Worcestershire Sauce
- Add Texas Pete Hot Sauce
- Add Ground Black Pepper
- Crumble the slice of bread and toss it in the bowl.
- Gently mix the ingredients together, don’t over work.
- If the mixture is very moist, add flour as needed to adjust consistency.
- Divide and shape the mixture into four patties. Set aside.
- Heat a skillet to medium heat and add shortening or oil for frying.
- Place the patties in the skillet, brown the bottom.
- Carefully turn the patties over and brown the other side.
- When brown on both sides, remove from skillet and drain on paper towel.
- Serve while warm and Enjoy!

- Drain juice from salmon. Pour salmon into a medium bowl and using a fork break salmon apart into small pieces.
- Add onions, beaten eggs, cornmeal, salt and pepper to taste, mix thoroughly. Shape the mixture evenly into four cakes or patties.
- Heat the butter or oil over medium heat in a medium skillet. Brown salmon croquette patties on both sides, 3-5 minutes on each side. Serve your salmon croquettes hot.

- Combine 1 cup flour, baking powder, salt and sugar. In another bowl, combine egg, water and 1/3 cup lemon juice; stir into dry ingredients until smooth. , Place remaining lemon juice and remaining flour in separate shallow bowls. Dip fillets in lemon juice, then flour, then coat with egg mixture., In a large skillet, heat 1 in. oil over medium-high heat. Fry fillets until golden brown and fish flakes easily with a fork, 2-3 minutes on each side. Drain on paper towels. If desired, serve with lemon wedges.

The secret to perfect pan pizza is pressing the dough into a well-oiled pan (Pizza Hut uses soybean oil), then the pan is covered and the dough rises in a heated cabinet for 45 to 60 minutes. When the dough is topped, the edge is sprayed with a butter-flavored “food release” and the pie is baked at 500 degrees F until perfectly browned on top. You can use a 9-inch, 12-inch, or 15-inch deep dish pizza pan or cake pan for this recipe, and you’ll want to preheat your oven with a pizza stone in it to simulate the type of oven used at the chain. The hot ceramic surface of the pizza stone will cause the oil in the pan to cook the bottom of the dough so that it’s brown and crispy like an authentic pan pizza crust should be. I tried making the dough with cake flour, all-purpose flour, superfine “00” flour, bread flour and many combinations of these different flours which all contain varying amounts of gluten. I even tried rising the dough slowly in the refrigerator for various lengths of time as long as up to four days. But after a month of testing and about 30 pan pizzas later, I found the best dough to be straight bread flour, and to let the dough rise at room temperature. I did find that if you let the dough rest for at least 4 hours before the final rise in the pizza pan you will get the best texture with the perfect chewy bite to it.
