This is a very rich and very wonderful moist cake with an amazing flavor. It's called "Rose Cake" because I use a rose shaped bundt pan for a beautiful presentation. This cake is so rich, that it doesn't need frosting. I dust it with confectioners sugar. It is lovely served w/ fresh fruit...I like fresh strawberries with it! COOKS NOTE: Use cake flour only, and REAL butter and REAL vanilla!

Yield 1 cake

Number Of Ingredients 10

2 3/4 cups cake flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup butter
6 ounces cream cheese
2 1/2 cups sugar
5 eggs
2 teaspoons vanilla
2 tablespoons fresh lime juice
2 teaspoons finely grated lime zest

Steps:

  • Have all the ingredients at room temperature. Position a rack in the lower third of oven and preheat to 325°F Thoroughly grease and flour a rose bundt pan (or a any bundt pan).
  • Sift together the flour, baking soda and salt; set aside.
  • In the bowl of an electric mixer fitted with the flat beater, beat the butter and cream cheese on medium speed until creamy and smooth.
  • Gradually add the granulated sugar and beat until light and fluffy, about 5 min., occasionally scraping down the sides of the bowl.
  • Increase the speed to med-high and add the eggs one at a time, beating well after each addition, and scraping down the sides of the bowl.
  • Beat in the vanilla and lime juice.
  • Reduce the mixing speed to low and add the flour mixture in three additions, beating each addition until just incorporated; stop the mixer occasionally to scrape down the sides of the bowl.
  • Using a rubber spatula, stir in the lime zest.
  • Spoon the batter into the prepared pan, making the sides about 1 inch higher than the center.
  • Bake until the cake is golden and a toothpick inserted into the center comes out almost clean, 65 to 70 minutes.
  • Cool in pan about 10 minutes. Remove from pan and cool completely. Dust cooled cake lightly with confectioners sugar.

1 cup white sugar
½ cup unsalted butter, softened
2 large eggs
2 teaspoons vanilla extract
1?½ cups all-purpose flour
1?¾ teaspoons baking powder
¼ teaspoon salt
¼ cup half-and-half
¼ cup rose water
2 drops red food coloring, or as desired
3 cups confectioners' sugar
1 cup unsalted butter, softened
1 tablespoon half-and-half, or more as needed
1?½ teaspoons vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch cake pan.
  • Cream sugar and butter for cake together in a bowl with an electric mixer. Beat in eggs, one at a time, then stir in vanilla extract. Combine flour, baking powder, and salt separately, then add to mix, and cream together. Stir in half-and-half and rose water. Add a few drops of food coloring to turn pinkish (or whatever color you want). Pour into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, 30 to 40 minutes. Cool on a wire rack for 5 minutes. Run a table knife around the edges to loosen. Invert carefully onto a serving plate or cooling rack. Let cool, about 30 minutes.
  • While cake cools, beat confectioners' sugar and butter with an electric mixer on low speed, then increase speed to medium for about 3 minutes. Add half-and-half and vanilla extract and beat for 1 minute more. Add more half-and-half if frosting is too thick. Frost cooled cake.

This is one of those recipes that everyone loves, you can dress it up, or dress it down. My husband & I were shopping one day & he wanted to pay a lot of money for this cake, & it was only 1 layer with a lot of frosting on top, I told him I could make one, & it would taste a lot better. So I did, & now he loves it. My version is slightly different from the original recipe, I use ALL butter in my version, & also use all purpose & whole wheat flour, the first time by accident, because I didn't have quite enough A P flour.
