MOCK APPLE PIE WITH RITZ CRACKERS RECIPE | MYRECIPES
Apple pie with no apples? That's right. The buttery Ritz crackers in this easy, mock apple pie mimic the texture of actual cooked apples while the spices, sugar, and lemon juice combine to replicate iconic apple pie flavor.

Steps:
- Preheat oven to 400°F. Bring water, sugar, and cream of tartar to a boil in a medium saucepan over medium-high. Stir in 30 whole Ritz crackers, and simmer 5 minutes. Remove from heat, and stir in lemon juice and 2 teaspoons of the cinnamon.
- Pour mixture into prepared pie crust. Crush remaining 25 crackers. Stir together crushed crackers, butter, brown sugar, and remaining 1/2 teaspoon cinnamon; sprinkle topping over filling in crust.
- Bake in preheated oven until golden brown, 20 to 25 minutes. Let stand at least 10 minutes before serving. Top with whipped cream if desired.

- Preheat oven to 350 degrees F.
- Melt the butter in a 9 by 13-inch pan in the oven. While it melts, combine everything else except the fish in a pie pan. Dip the fish around in the melted butter, dip each piece in the crumb mixture, and return it to the baking pan. Bake the fillets for 20 to 25 minutes, or until the fish flakes with a fork. Serve with lemon wedges, and good luck to you.
