Ingredients

1 medium onion, chopped
1 celery rib, chopped
2 tablespoons butter
2 cups whole milk
1-1/4 cups uncooked instant rice
2 cups diced cooked turkey
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 cup seasoned stuffing cubes
1 can (4 ounces) chopped green chilies, drained
1 cup shredded cheddar cheese, divided

Steps:

In a 2-qt. microwave-safe dish, combine the onion, celery and butter. Cover and microwave on high for 1-1/2 to 3 minutes or until butter is melted. Stir in milk. Cover and cook on high for 3-5 minutes or until milk is steaming (do not boil). Stir in rice. Cover and let stand for 2 minutes., Add the turkey, soup, stuffing cubes, chilies and 1/2 cup cheese. Cover and microwave on high for 3-6 minutes or until heated through, stirring once. Sprinkle with remaining cheese. Cover and let stand for 5 minutes.

Sausage and beans has to be every kid’s favourite meal. This healthier sausage and bean casserole recipe includes baby spinach, red peppers and cherry tomatoes, and is best served with crusty bread for a fuss-free weeknight supper.

Ingredients

454g reduced-fat sausages
1 tsp olive oil
1 red onion, cut into wedges
2 red peppers, seeds removed and sliced
2 x 400g reduced sugar and salt baked beans
100g baby leaf spinach
270g cherry tomatoes
14g parsley

Steps:

Preheat the oven to 200°C/fan 180°C/gas mark 6. Place the sausages in a deep, large oven tray and drizzle with the oil. Roast for 15 minutes.

Remove the tray from the oven and add the onion and peppers. Roast for a further 10 minutes, then stir through the baked beans and spinach and top with the tomatoes. Season with black pepper and bake for a further 15 minutes until cooked. Garnish with the parsley and serve with crusty bread.
