This 2-ingredient, easiest chicken is one of the best baked chicken dishes you are likely to make.

Number Of Ingredients 2

1 chicken, about 3 1/2 pounds, cut into 8 pieces
1-1/4 cup duck sauce (Sweet & Sour)

Steps:

  • 1. Preheat oven to 375°F. Spray a 9 x 13-inch pan with non-stick cooking spray.  2. Rinse chicken and pat dry. Arrange in prepared pan. 3. Pour duck sauce liberally and evenly all over chicken. 4. Bake, uncovered, for 1 hour and 15 minutes, or until skin is crispy and brown. Chicken should look slightly blackened and barbecued. After trying a few recipes I developed my own version. I think it's the best!

Yield 8 Cups

Number Of Ingredients 8

5 cups coarsely chopped mixed fruit (apples, plums, and pears)
1 cup water
¾ cup apple juice
1 teaspoon soy sauce
1 tablespoon apricot preserves
½ cup packed light brown sugar
½ teaspoon garlic powder
½ teaspoon dry mustard

Steps:

  • Place fruit in a stock pot over medium high heat. Add water, apple juice, soy sauce, apricot preserves, brown sugar, garlic powder, and dry mustard. Bring to a simmer, stirring frequently to dissolve brown sugar. Reduce heat, and continue simmering for 40 minutes, or until fruit is completely soft. Remove from heat and allow to cool.
  • Blend sauce in a food processor or blender until completely smooth, adjusting consistency with additional water, if desired. Cover, and refrigerate until ready to use.

  • For the sauce: In a small bowl, mix the cornstarch with 1 tablespoon cold water and set aside. Next, heat a pan or wok over medium heat and add the hoisin, sugar, sesame oil and soy sauce. When the sauce starts to bubble slightly, add the cornstarch mixture and stir well to thicken. Set aside and let cool. Carve and slice some duck.
