APRICOT BREAD RECIPE: HOW TO MAKE IT - TASTE OF HOME
This is my most asked-for recipe. I've used it for many years, which is obvious from my recipe card that's yellowed and full of stains. The fruity appearance and taste of this easy-to-make bread blend beautifully with our warm Florida sunshine. It's always a hit whenever I serve it.

- Preheat oven to 350°. Soak apricots in warm water for 30 minutes. Meanwhile, in a bowl, cream the sugar, butter and egg. Stir in orange juice. Combine flour, baking powder, baking soda and salt; stir into creamed mixture just until combined. Drain apricots well; add to batter with nuts. Pour into a greased 9x5-in. loaf pan. Bake at 350° for 55 minutes or until bread tests done. Cool 10 minutes in pan before removing to a wire rack.

CHICKEN TERRINE WITH LEEKS & APRICOTS RECIPE | BBC GOOD FOOD
Whet the appetite for the main event by serving guests this special chicken terrine with leeks and apricots. It can be made up to three days ahead

- Put the chicken thighs into a pan with the stock and a string-tied bundle of 2 bay leaves, a few of the thyme sprigs and a little of the parsley. Add a few leek trimmings, the peppercorns and ½ tsp salt. Add water to just cover the meat, if needed. Bring to the boil, then cover and gently simmer for 30 mins.
- Meanwhile, lightly butter a 900g loaf tin (ours was 12cm x 22cm x 7cm) and line with cling film, leaving plenty of overhang. Melt the butter in a frying pan, then add the leeks, shallots and some seasoning. Cook for 10 mins over a medium heat until starting to colour. Add the bacon and garlic and cook for 2 mins more until the bacon is cooked through. Leave to cool.
- Add the chicken breast to the stock mixture and top up with hot water to cover. Bring to the boil, then cover and simmer gently for another 20 mins. When ready, the chicken breast will be cooked through and the thigh meat will pull away easily from the bones. Lift the meat from the pan, drain the stock and leave to cool until it is just warm.
- Discard the bones and any knobbly bits, then roughly chop the chicken. Stir into the leek mixture, along with 2 tsp more thyme leaves, the apricots and the brandy.
- Soak the gelatine in cold water for 5 mins until floppy. Squeeze out the excess water, stir into 300ml of the warm stock, then mix with the chicken. Put a few bay leaves in the base of the tin, then spoon the chicken mixture on top and press down well. Cover with the cling film. Leave to cool, then chill thoroughly – overnight is best. Can be made up to three days ahead.
- To serve, slice the terrine while it's still wrapped in cling film, then carefully peel the cling film off each slice. Drizzle the toast slices with olive oil and grill until golden brown and crisp, then sprinkle with a little salt. Serve the terrine with the toast and our yogurt piccalilli & crisp kale salad.

- Peel and finely chop the onions, then sweat in a frying pan on a medium heat with 1 tablespoon of olive oil and a pinch of sea salt and black pepper for 10 minutes, or until soft but not coloured, stirring often.
- Pick and finely chop the herb leaves and stir into the pan, with the chilli flakes for a bit of warmth (if using).
- Trim off the crusts then tear the bread into a bowl and soak it in the milk and 150ml of water for a couple of minutes so it gets really soft. Squeeze between your hands to get rid of the excess liquid, then transfer to a separate bowl.
- Tip in the soft onions and mix together – the bread will cool the onions down quickly.
- Once completely cool, add the sausagemeat or squeeze the meat out of the chipolata skins into the bowl and use clean hands to scrunch it all together. This is your base stuffing mix and it’s delicious!
- Or, you can embellish it with one or a combination of the ideas: 1 small handful of chopped dried fruit, such as cranberries, raisins, dates, dried apricots; 1 splash of sherry or sweet wine; 1 handful of pine nuts or chopped mixed nuts; the finely grated zest of 1 clementine or 1 small orange; a good grating of nutmeg.
- Rub the inside of a baking dish (20cm x 30cm) with butter.
- Reserve one handful (roughly 200g) of stuffing for your turkey, then push the rest into the dish, spreading it out fairly evenly.
- Use any extra herbs, nuts and dried fruits you have to decorate the top, pushing them in with your fingers. Drizzle with a little oil to help it crisp up, then pop in the fridge until you’re ready to cook.
- Bake at 180°C/350°F/gas 4 at the bottom of the oven so you get a really crispy base, for 35 to 40 minutes, or until golden and cooked through.

- Preheat the oven to 180°C/350°F/gas 4, and lightly grease a shallow cupcake tray with butter.
- Roll out half the pastry on a clean flour-dusted surface to 3mm thick, then cut out 12 circles using a pastry cutter or a clean glass tumbler. Lay them in the hollows of the tray and place in the fridge to chill for 30 minutes.
- Spoon the mincemeat into a mixing bowl, breaking it up with a spoon as you go, then pour in the brandy.
- Peel the apple and chop into small chunks, then finely chop the ginger and apricots and stir it all to the mincemeat with the cranberries and mixed spice.
- Roll out the remaining pastry to the same thickness, then using a smaller cutter or tumbler, cut out another 12 circles – these will be the lids for your pies.
- Knead the pastry trimmings together briefly, roll out and cut into shapes to decorate the tops of your pies (stars and tree-shapes work well).
- Take the pastry bases out of the fridge and fill them just over halfway up with mincemeat, then smooth the filling out to the edges. Beat the egg and milk together, then brush over the top edges of the pastry.
- Lay the lids over the top, then crimp the edges together with your thumb and forefinger so the lids stick to the bases. Top each pie with a cut-out shape, then brush once more with the eggwash.
- Bake for 25 minutes, or until golden. Dust with icing sugar before serving, then dig in.
