1?½ tablespoons lime juice
1?½ tablespoons mango chutney
1 tablespoon seasoned rice vinegar
1 teaspoon honey
¼ teaspoon ground cumin
¼ teaspoon ground coriander
¼ teaspoon ground paprika
1 teaspoon olive oil
4 skinless, boneless chicken breast halves - cut into strips
2 teaspoons grated fresh ginger
1 clove garlic, peeled and minced
1?½ cups peeled, seeded and chopped mango
1 cup sliced red bell pepper
? cup chopped green onion
8 cups torn romaine lettuce

Steps:

  • In a small bowl, blend vanilla yogurt, lime juice, mango chutney, rice vinegar, honey, cumin, coriander, and paprika.
  • Heat olive oil in a medium skillet over medium heat. Place chicken, ginger, and garlic in the skillet. Cook 7 to 10 minutes, stirring occasionally, until chicken is no longer pink and juices run clear.
  • Mix mango, red bell pepper, and green onions into the skillet. Cook about 5 minutes, until pepper is tender and mangoes are heated through. Stir in the vanilla yogurt mixture. Spoon over romaine lettuce to serve.

6 cups torn romaine lettuce
2 cups fresh blueberries
1 mango, pitted, peeled, and cut up
12 - 16 ounce chicken breast tenderloins
Salt and ground black pepper
2 tablespoons purchased garlic butter
2 cups broccoli florets
½ cup bottled blue cheese Italian vinaigrette salad dressing
Crumbled blue cheese (optional)

Steps:

  • On a serving platter place romaine lettuce. Top with blueberries and mango; set aside.
  • Season chicken breast tenderloins with salt and pepper. In a large skillet cook chicken in 1 tablespoon of the hot garlic butter over medium heat for 6 to 8 minutes or until no longer pink, turning once. Transfer to a cutting board; slice. Arrange atop salad.
  • In the same skillet cook broccoli in the remaining tablespoon garlic butter over medium heat for 4 to 6 minutes until tender. Place atop salad. Drizzle salad with blue cheese vinaigrette. If desired, sprinkle with blue cheese. Makes 4 servings.

    1. Preheat the oven to 180ºC/350ºF/gas 4.
    2. Place the peanuts on a tray, then place in the oven to roast until golden.
    3. For the dressing, mix the fish sauce, rice wine vinegar and 2 tablespoons of lime juice in a small bowl. Grate in the palm sugar, stirring, until completely dissolved (you might need to muddle some of the larger bits).
    4. Peel and finely chop the garlic, deseed and finely chop the chilli, then add to the bowl. Taste to make sure the flavours are balanced: it should be zesty, sweet and fresh, with depth from the fish sauce.
    5. Place the chicken in a deep pan, cover with water and bring to the boil. Reduce the heat and simmer for 10 to 15 minutes, or until cooked through.
    6. Coarsely grate or cut the carrots into matchsticks, then halve, deseed and thinly slice the cucumber on an angle. Peel and finely grate or cut the mango into matchsticks, then pick and roughly chop the mint leaves.
    7. Peel and cut the onion into fine wedges, trim and finely dice the spring onions, then halve the tomatoes.
    8. Crush the roasted peanuts in a pestle and mortar.
    9. Transfer the cooked chicken to a bowl of iced water to cool, then drain and shred the meat and place in a large bowl.
    10. Add the chopped vegetables, beansprouts and beancurd (if using) to the bowl with the chicken and toss to combine.
    11. Divide among serving plates and drizzle lightly with the dressing. Sprinkle over the peanuts, then tear over the coriander leaves and serve with finely sliced red chilli, if you like.
