Bibingka (Sweet Rice Flour) Recipe - Food.com image

Made with Mochiko (sweet rice flour) and coconut milk. This is one of my favorite Filipino desserts that I had growing up. Pieces of this dessert are like eating Pringles...you can't eat just one.

Prep Time 5 minutes

Cook Time 40 minutes

Yield 24 pieces

Number Of Ingredients 10

Ingredients

16 ounces mochiko sweet rice flour (1 box)
1/2 cup butter (1 stick)
2 cups sugar
4 eggs
1 teaspoon vanilla
1 teaspoon baking powder
1/4 teaspoon salt
8 ounces sour cream
14 ounces coconut milk (1 can)
1/2 cup shredded coconut (optional)

Steps:

Preheat oven to 350 degrees and butter or spray a 9 x 13 glass dish.
Cream the butter, sugar and eggs in a bowl.
Add remaining ingredients and blend well.
Pour into glass dish and bake for 40-50 minutes.
Edges should have a nice light brown color while the middle is a nice cream color. Eat hot or cold.
(Optional) I like to add the shredded coconut to the batter. For the last 15 minutes of baking, I also like to take some of the shredded coconut and sprinkle it to the top of the cake to toast the coconut. Very delicious!

Ingredients

1/2 cup butter, softened
1/2 cup unbleached cane sugar
2 eggs
2 teaspoons gluten-free vanilla extract
1 1/4 cups rice flour
1 teaspoon baking powder

Steps:

Coat an 8-inch square or round cake pan with olive or canola oil spray. Set aside.
Preheat oven to 350 deg F.
Cream the butter with the sugar until well blended.
Add eggs and vanilla, beating with a wire whisk.
Add flour and baking powder and continue to beat until well mixed.
Pour batter into prepared pan. Bake the cake for 40 to 45 minutes or until done when tested with a toothpick.

Grind the cinnamon in a coffee grinder. Butter a 9 by 13-inch glass baking dish. In the bowl of an electric mixer, cream the butter and shortening. Add the sugar and whip until light and fluffy. Beat in 1 egg at a time. Sift the rice flour and baking powder into the mixture a little at a time. Stir in the cheese. Then add the batter to the buttered baking dish and cook for 20 to 25 minutes in 425 degree F oven until golden brown on the outside.
