Steps:
- Preheat oven to 350 degrees F.
- Butter a shallow 1-quart baking dish.
- In a large bowl whisk half-and-half, eggs, 1 teaspoon salt, 1/8 teaspoon pepper, and nutmeg together; stir in 1 +1/2 cups of the cheese then the spinach. Spread evenly in prepared baking dish, and top with remaining 1/2 cup cheese.
- Bake until set in the middle and top is golden brown, 30 to 35 minutes.

- Chop the bacon and put it in a large nonstick skillet over medium-high heat. Cook the bacon for about 10 minutes, then add the onion. Cook everything until bacon reaches desired crispness, about 15–20 minutes.Add the spinach to the skillet, and cook until everything is heated through.Move everything to one side of the skillet and crack the eggs into the empty side of the skillet. Scramble the eggs, keeping them mostly separated from the bacon spinach mixture until they begin to clump up.Mix everything together and sprinkle with a couple generous pinches of salt. Serve.
