Baked Mac and Cheese Recipe: How to Make It image

Even people who have had their own homemade baked macaroni and cheese recipe for years ask for mine when they taste this crumb-topped version. For the best baked mac and cheese, use extra-sharp white cheddar cheese for more flavor. —Shelby Thompson of Dover, Delaware

Number Of Ingredients 10

1 package (16 ounces) uncooked elbow macaroni
1/3 cup plus 1/4 cup butter, divided
3/4 cup finely chopped onion
6 tablespoons all-purpose flour
1 teaspoon ground mustard
3/4 teaspoon salt
1/4 teaspoon pepper
4-1/2 cups 2% milk
4 cups shredded sharp cheddar cheese
3/4 cup dry bread crumbs

Steps:

  • Preheat oven to 350°. Cook macaroni according to package directions for al dente; drain., In a Dutch oven, heat 1/3 cup butter over medium heat; saute onion until tender. Stir in flour and seasonings until blended; gradually stir in milk. Bring to a boil, stirring constantly; cook and stir until thickened. Stir in cheese until melted. Stir in macaroni. Transfer to a greased 13x9-in. baking dish., In a microwave, melt remaining butter; toss with bread crumbs. Sprinkle over casserole. Bake, uncovered, until heated through, 30-35 minutes.

I love experimenting with vintage recipes and this one from my 1941 cook book did not disappoint. It was easy to make and it was beyond good! I hope you'll try this recipe.

Number Of Ingredients 12

1 cup(s) elbow macaroni cooked according to package directions
1 1/2 cup(s) white sauce (recipe to follow)
1 cup(s) shredded sharp cheddar cheese
buttered crumbs
WHITE SAUCE
3 tablespoon(s) butter
3 tablespoon(s) all purpose flour
1 1/2 cup(s) whole milk
salt and pepper to taste (i also used about 1/4 tsp paprika for color)
BUTTERED CRUMBS
1 sleeve round buttery crackers, crushed (i.e. town house)
3 tablespoon(s) melted butter

Steps:

  • Preheat oven to 375 degrees. Spray a 2.75 quart pyrex baking dish with cooking spray or grease lightly with butter. Set aside
  • Cook 1 cup macaroni according to package directions and drain well. Set aside.
  • In a heavy saucepan, melt butter being very careful not to scorch. Add flour and stir well. Slowly pour in milk, salt and pepper and cook over medium heat, stirring constantly until thickened. Remove from heat an add cheese, stirring until cheese is melted.
  • Add cooked macaroni and fold into cheese sauce. Pour mixture into prepared baking dish. Combine crushed crackers and butter and sprinkle over the top.
  • Bake uncovered for 25 to 30 minutes or until bubbly and crumbs are golden.

Our favorite mac and cheese recipe calls on a few smart steps to make sure the macaroni and cheese is ultra creamy and flavorful.   • Preheat oven to 350° and butter a large, deep baking dish. In a large pot of boiling salted water, cook macaroni according to package instructions until just al dente. Drain and set aside.  In a large bowl, combine cooked pasta and butter and season with salt and pepper to taste. Stir in 2 cups cheddar cheese. Add half of the macaroni mixture to prepared baking dish. Sprinkle Colby-cheddar cheese blend over pasta mixture, then top with another layer of pasta (similar to making a lasagna).  In a medium bowl, beat together eggs and milk then pour evenly over pasta.  Cover baking dish with aluminum foil and bake for 25 to 35 minutes. Do not overbake! It may be a bit jiggly when you take it out of the oven.  Turn on oven broiler. Top with the remaining cheddar cheese. (I add a little more Colby jack as well) and broil until golden! It will firm up as it cool.
