This is a recipe that my Grandmother used to keep me and my finicky cousins well fed! It is very kid friendly, and adults like it too!

Ingredients

1 pound lean ground beef
3 cups peeled and thinly sliced potatoes
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup chopped onion
¾ cup milk
salt to taste
freshly ground pepper, to taste
1 cup shredded Cheddar cheese

Steps:

Preheat oven to 350 degrees F (175 degrees C).
In a medium skillet over medium heat, brown the ground beef; drain fat.
In a medium mixing bowl, combine cream of mushroom soup, onion, milk, salt and pepper to taste.
Alternately layer the potatoes, soup mixture and meat in a 11x7 inch (2 quart) baking dish. Bake in the preheated oven for 1 to 1 1/2 hours, or until potatoes are tender. Top with Cheddar cheese, and continue baking until cheese is melted.

This is a simple,yet east casserole that I nearly always have the ingredients for on hand. It's as easy as "Hamburger Helper" and much better. Freezes well!

Ingredients

1 1/2 lbs fresh ground chuck
1 large onion (chopped)
1 (8 ounce) package noodles
1 (16 ounce) can whole tomatoes or 1 (16 ounce) can diced tomatoes
1 can white corn
1 (10 ounce) can condensed tomato soup
1 cup grated cheddar cheese
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon garlic salt

Steps:

Brown onions and meat,season with salt pepper and garlic salt.
Boil the noodles in water for 6 minutes and drain.
Drain corn.
Mix all ingredients and turn into a two-quart greased casserole dish.
Can top with a little more grated cheese.
Bake 30 minutes at 350 degrees.

Stir in tomato sauce, sugar, salt and pepper; heat through. Drain noodles; stir into beef mixture., In a small bowl, beat cream cheese, ricotta cheese and sour cream until blended. Stir in half of the onions., Spoon half the noodle mixture into a 13x9-in. baking dish coated with cooking spray. Top with cheese mixture and remaining noodle mixture., Cover and bake 30 minutes. Uncover; sprinkle with cheddar cheese. Bake until heated through and cheese is melted, 5-10 minutes longer. Sprinkle with remaining onions.
