Ham Hocks and Beans Recipe - Food.com - Recipes, Food ... image

Comfort food at its best. Many people will tell you to soak your beans first (however, I have been told that you should soak dry beans when using a pressure cooker. Please follow manufactorers instructions in this case). I never do. I just wash them and cook them as below. For a really hearty winter meal, serve these with a loaf of hot fresh bread or a pan of corn bread and a pan of old fashioned crisp fried potatoes. These may also be made in the pressure cooker and crockpot.

Total Time 4 hours 10 minutes

Prep Time 10 minutes

Cook Time 4 hours

Yield 8 serving(s)

Number Of Ingredients 8

1 bag dry beans (my favorite is a 15 bean mix)
4 -6 ham hocks
1 large onion, chopped
6 cloves garlic, minced (more if desired)
1 large bay leaf
1 tablespoon oregano
1 teaspoon pepper
salt

Steps:

  • Wash beans and remove all gravel and such.
  • Place beans, ham hocks, onions and garlic in a large dutch oven filled with water.
  • Add spices.
  • Bring to boil.
  • Simmer on med-low heat for 4 to 5 hours, adding more water as needed.
  • Remove hamhocks when they are tender and falling apart; allow to cool so they can be handled.
  • Remove meat from ham hocks (discarding fat and bones) and return to the soup.

1 1/2 pound smoked ham hock
2 quarts chicken stock, water, or combination
Salt and freshly ground black pepper

Steps:

  • In a large saucepan, saute onion, celery and carrots over medium-high heat. Add peas and ham hock and cover with stock by a couple inches. • After 1–1½ hours, use tongs to remove the ham hocks to cool (they'll be falling off the bone). Add another ½ cup of stock, the cane vinegar, and the cane syrup to the greens. Stir, taste, and adjust seasoning if necessary. When the ham hocks have cooled, pull the meat off the bones, chop finely, and add back into the greens. Serve in a bowl with bits of ham hock and plenty of the "potlikker."

GREEN PEA AND HAM SOUP RECIPE | EPICURIOUS
I've eaten split pea and ham soup for as long as I can remember. On chilly days when my dad was being stingy with the heat, it especially hit the spot. But this concept is just as good in the springtime, when sugary fresh peas show up at the greenmarket. Although I must admit that I rarely feel like shelling peas at home after a long day in the kitchen, and I love frozen peas, which are consistently fine, so that's what I call for here. The finished dish is bright green and sweet, with little chunks of ham, carrots, and cool white blobs of crème fraîche floating on its surface.

  • Add a generous drizzle of olive oil, several twists of black pepper, and the torn mint leaves. Then add the crème fraîche in little blobs here and there, so everyone will get a bit. Serve the soup in the pot, with small bowls along-side.

  • *Brine the shanks with the rest of the hind quarter and add to the smoker for a few hours. It will absorb plenty of wood-smoked flavor and can then be transferred to a crockpot to finish tenderizing with onions, beans, and greens for a smoked hock stew.
