This is always requested over and over again. I love it and I don't really like corn. My best friend made this once and convinced me to try it, now it's a tradition to make for all holidays.

CREAM CHEESE-CORN CASSEROLE RECIPE | MYRECIPES
Our Cream Cheese-Corn Casserole is so creamy and decadent, it's basically like you're eating queso with a spoon. It's perfect for potlucks and gatherings, and makes a great addition to any holiday table. If you can't find or just don't care for pepper jack, use a blend of cheddar and Monterrey jack. You can also serve this as a dip instead. Simply add more milk, and perhaps cheese, until you reach your desired consistency, or use an immersion blender. Turn leftovers into dip, or combine them with chopped, cooked chicken, cubed potatoes, and chicken stock to make a spicy corn chowder.

5 INGREDIENT JIFFY CORN CASSEROLE RECIPE - FOOD.COM
Okay, I have made this in the past for "Mexican" night & poker nights... but then we had this again a few weeks ago at a friends party and just had to post the recipe for easy access & safe keeping. There are several recipes out there for this casserole, but they are all different. This one has no eggs (which seems to be hard to find) and uses only 5 ingredients. It's so easy to make but always a crowd pleaser - try it at a BBQ, alongside chili, or as a Holiday side-dish... ** NOTE: The consistency is supposed to be like a spoonbread, it is a casserole, not like cornbread you would cut into pieces -this is like Chi Chi's corn casserole they served on the side. PS- I make a double batch & bake in a 9x13x2 casserole dish. Lastly, if you add about 3/4 cup of sugar to this, you could serve it as a dessert :-)

BAKED CORN CASSEROLE RECIPE | ALLRECIPES
This is a delicious variation on a corn casserole. Thank you! I used some Oscar Meyer bacon bits, a few more chile peppers and one-third creamed corn to 2/3 whole kernel (thereby reducing the "soupiness" noted by some others) with good results. The first servings resulted in seconds, a cleaned out casserole dish and a request for the recipe.
