Raw Vegan Zoodles with Romesco Recipe - EatingWell image

Trying out a raw vegan diet or just looking for an easy no-cook recipe? This spiralized zucchini noodle dinner with red pepper sauce is refreshing, satisfying and oh-so-delicious! Plus, it couldn't be easier to make. Just whir up the 5-ingredient sauce in your food processor or blender, toss and serve!

8 cups zucchini noodles (from 3 medium)
½ teaspoon salt, divided
¼ teaspoon ground pepper
¼ cup raw almonds
1 medium red bell pepper, cut into chunks
2 tablespoons cold-pressed extra-virgin olive oil
1 small clove garlic, crushed
1 teaspoon paprika
½ teaspoon ground cumin
¼ teaspoon crushed red pepper

Steps:

  • Toss zucchini noodles with 1/4 teaspoon salt and pepper in a large bowl.
  • Place almonds in a mini food processor and pulse until coarsely chopped. Add red pepper, oil, garlic, paprika, cumin, crushed red pepper (if using) and the remaining 1/4 teaspoon salt; process until fairly smooth. Add 3/4 of the red pepper sauce to the zucchini and toss to coat. Serve, topped with a bit more sauce, if desired.

1 lb ground beef
3 garlic cloves
1 small purple onion
1 (14 1/2 ounce) can tomatoes
1 (32 ounce) bottle spaghetti sauce
1 (16 ounce) package mushrooms
16 ounces lasagna noodles
1 (16 ounce) package pre-shredded mozzarella cheese
32 ounces ricotta cheese
16 ounces parmesan cheese

Steps:

  • Preheat oven to 400.
  • Brown Ground Beef with minced garlic and chopped onion.
  • Add tomatoes, sauce and mushrooms, let simmer for 20 minutes.
  • Mix all cheeses in a bowl.
  • Using a 20 x 9 baking dish layer meat, noodles, meat, cheese, noodles, meat, cheese, noodles, meat, cheese, (making 3 layers).
  • Bake covered with foil for 1 hour at 400.
  • Remove foil and continue to bake for 5 more minutes or until golden on top.
  • Note: Do not pre cook noodles, add to baking dish raw.
