- Place the raspberries, sugar, and water in a medium saucepan over medium low heat. Cover and cook for 5-8 minutes or until the berries start to break down. Remove the lid and continue to cook until the mixture thickens, about 5 minutes. The liquid should be syrupy but should not start to brown.
- Move the mixture to a blender and blend until the mix is smooth and jam-like. Pass the mix through a fine mesh strainer. Chill or retain at room temp for use in dessert applications.
