QUAHOG CHOWDER RECIPE - FOOD.COM

Quahog Chowder Recipe - Food.com image

The clam that Rhode Islanders call a quahog possesses an impressive variety of names, and even the word "quahog" has more than one spelling and a number of pronunciations: KO-hog, KWO-hog, and KWA-hog. Indians used quahog shells to make beads that were used as money (called wampum). Although quahogs can be found along the North American Atlantic coast from Canada's Gulf of Saint Lawrence to Florida, these clams are particularly abundant between Cape Cod and New Jersey. From the New England chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947.

QUAHOG CHOWDER RECIPE | MYRECIPES

Quahog Chowder Recipe | MyRecipes image

I've found over the years that chowder is the perfect dish on a boat or in a small cottage--easy to assemble, hearty, requiring minimum fuss (just one pot!), and highlighting the saltiness of the sea.

Provided by Jennifer Trainer Thompson

Total Time 1 hours 25 minutes

Yield Makes 8 servings

Number Of Ingredients 11

30 quahogs (or 48 littleneck clams), scrubbed
5 bacon slices, chopped
6 tablespoons butter
1 yellow onion, diced
1 celery stalk, chopped
½ teaspoon fresh thyme leaves
6 tablespoons flour
4 medium potatoes, diced
2 cups heavy cream
2 cups milk
Butter

Steps:

  • Bring 2 cups water to a boil in a large soup pot or Dutch oven over medium heat. Add clams; steam 7 to 8 minutes or until shells open. (Discard any that do not.) Remove clams from pot with a slotted spoon. Strain liquid through a fine wire-mesh strainer, reserving 4 cups. Remove clam meat from shells, and coarsely chop.
  • Cook bacon in soup pot over medium heat about 8 minutes or until crispy. Remove bacon from pot with a slotted spoon, and drain on paper towels. Discard pan drippings.
  • Melt 6 tablespoons butter in soup pot over medium heat. Add onion, celery, and thyme; cook, stirring occasionally, 10 minutes. Add flour; cook, stirring often, 2 to 3 minutes. Add reserved clam liquid; cook, stirring often, 5 minutes. Add potatoes, reduce heat to low, and cook 20 minutes or until potatoes are tender.
  • Add cream and milk; bring to a simmer. Cook, stirring often, until slightly thickened. Add bacon and chopped clams; cook 3 minutes or until heated through. Ladle into bowls, and top each with a pat of butter.

RHODE ISLAND QUAHOG CHOWDA RECIPE - FOOD.COM
In Rhode island, clam chowder is prepared with a clear broth, unlike the creamy white clam chowders found elsewhere in New England and also different from the red broth found in Manhattan style clam chowder. And ,oh yes, they use quahogs, a large cousin of the clam.*(If quahogs are unavailable, just use whatever clams you can get.) Adapted from Yankee magazine.

QUAHOG CHOWDER | JUST A PINCH RECIPES
Recipe taken from cookbook " Foods that made New England Famous" by Mrs. Nelson A. Washburn, Needham, MA. She wrote: This recipe had its origin in the ingenuity of an early Plymouth housewife. I received it from one of her fine old Yankee descendants. He said , " In the old days when my family had to make do with things at hand they or a neighbor always had a cow and a pig and a little backyard garden so they could get milk and pork and onions and potatoes. Plenty of Quahogs to be had just for the digging.

NEW ENGLAND CHUNKY HERBED QUAHOG CHOWDER RECIPE BY ROBYN ...
Quahog's, also known as "chowder clams" are big hard-shelled clams. If you don't live New England, you use chopped canned clams, but even better are fresh chopped clams carried in many seafood markets. Be sure to save the juice to use in the chowder. Tradition holds that clam chowder is made with salt pork, but good salt pork is hard to come by these days, so thick-sliced bacon can be substituted. And instead of the usual celery, this recipe uses fresh fennel, which makes a great flavor combination with clams.

A TASTE OF MARTHA’S VINEYARD: BLACK DOG TAVERN’S CLAM CHOWDER
Sep 24, 2011 · Quahogs are hard shell clams, different from soft shell clams, otherwise known as “steamers”. This recipe is from The Black Dog Summer on the Vineyard Cookbook that I acquired on my recent trip. It is fairly easy to make, and a little more time consuming if you are using fresh clams but totally worth the effort for that fresh flavor.

The Case for Fresh, Whole Quahogs . Fresh whole quahogs harbor some serious soul-soothing flavors that cannot be duplicated from canned clams.
