Use these adorable "pumpkins" to embellish our Pumpkin Cupcakes or any fall dessert. Divide marizpan into sections and dye with orange, green, and brown food coloring, then shape into miniature gourds.

7 ounces marzipan
Orange, brown, and green gel food coloring

Steps:

  • Place marzipan on a clean work surface. Cut in half. Add a few drops of orange food coloring to one half; knead with your hands until uniform in color. Add more food coloring as needed to achieve desired color. Shape into 3/4-inch balls. Use a toothpick to make indents in tops of balls for stems and press creases along outer edges from top to bottom for pumpkin ribs.
  • Divide remaining marzipan half into two pieces. Add a few drops of brown food coloring to one piece; knead with your hands until uniform in color. Add more food coloring as needed. Roll into small ropes to use as stems.
  • Add a few drops of green food coloring to remaining piece of marzipan; knead with your hands until uniform in color. Add more food coloring as needed. Roll out to a 1/8-inch-thick round. Cut out leaves using a small leaf-shaped cutter. Attach stems and leaves to tops of balls, pressing with a toothpick to adhere.

Make these sweet little cakes throughout the fall. For Halloween, all you need are some edible eyeballs and a bit of black food coloring to turn them into charming pumpkin ghosts. You'll need 2 (12-mold) madeleine pans to make this recipe. Find them at a kitchenware shop or online.

3 large eggs, at room temperature
? cup granulated sugar
? cup canned pumpkin
1 tablespoon orange zest
1 teaspoon vanilla extract
1?¼ cups flour
1 teaspoon baking powder
1 teaspoon cinnamon
¼ teaspoon fine salt
½ teaspoon ground cloves
¾ teaspoon nutmeg
½ cup unsalted butter, melted and cooled to room temperature, plus about 2 tbsp. additional melted butter for molds
1?½ cups white chocolate chips
1?½ teaspoons unrefined (virgin) coconut oil
1 to 1 1/4 cups powdered sugar
2 tablespoons whole milk
? to 1/4 tsp. black food coloring*

Steps:

  • In the bowl of a stand mixer using the whisk attachment, beat eggs and granulated sugar until frothy and thickened, about 2 minutes. Add pumpkin, zest, and vanilla and beat until incorporated. Remove bowl from mixer.
  • In another bowl, mix flour, baking powder, cinnamon, salt, cloves, and nutmeg. Using a rubber spatula, fold flour mixture into egg mixture.
  • Fold 1/2 cup melted butter, a few spoonfuls at a time, into batter. Fold just until butter is incorporated. Chill at least 1 hour and up to 12 hours.
  • Preheat oven to 425°. Brush molds of 2 madeleine pans with melted butter.
  • Using a small spoon, fill each mold about 3/4 full with batter and spread to edge of mold. Bake until edges are golden brown, about 9 minutes.
  • Meanwhile, melt white chocolate and coconut oil in a bowl set over (not in) 1 in. simmering water in a saucepan.
  • Make icing: In a small bowl, mix 1 cup powdered sugar with milk. Add enough food coloring to make it deep black. The icing should be fluid enough to pipe, but not runny. If it's runny, add more powdered sugar, 1 tbsp. at a time; if it's too thick, add milk, 1 tsp. at a time. Spoon icing into a small resealable plastic bag.
  • Let madeleines cool in molds 2 minutes. Line a baking pan with parchment. Using an offset spatula, lift madeleines out to a cooling rack. The moment they're cool enough to handle, dip curved top half of each in melted white chocolate and set, ridged side up, on parchment-lined pan. Set edible eyes toward top of chocolate-dipped half.
  • Freeze pan of madeleines for a few minutes to set chocolate. Squish icing into a corner of bag, then cut off just the tip of corner to create a piping bag. Pipe mouths onto madeleines (practice on parchment first).*Find black food coloring and candy eyeballs in the baking aisle of well-stocked grocery stores.
