250 grams Puff pastry dough (frozen)
Pastry flour (to roll out)
butter (for baking sheet)
80 grams powdered sugar
2 sheets gelatin
50 milliliters milk
250 grams Dark chocolate (minimum 60% cocoa)
50 milliliters Whipped cream
50 grams softened butter
2 egg yolks
1 tablespoon Vanilla sugar
2 egg whites
50 grams sugar
Chocolate shaving
powdered sugar

Steps:

  • Preheat the oven to 180°C (approximately 350°F).
  • Lay the puff pastry out to thaw. On a little flour, roll the pastry out to about 40 x 50 cm (approximately 1 foot x 1 1/2 foot). Grease a baking sheet with butter. Place the dough on the baking sheet and prick with a fork several times. On the second shelf from the bottom in a preheated oven bake, bake 15-20 minutes until golden brown. Add the powdered sugar and place under the oven broiler for 2-3 minutes watching carefully until caramelized and golden brown. Remove from the oven and cut lengthwise into four strips.
  • For the filling: Soak the gelatin in cold water. Heat the milk and dissolve the gelatin in it. Chop the chocolate coarsely and melt with the cream over a pan of hot water and let cool again. Whisk the egg yolks with the butter and vanilla sugar until fluffy. Stir into the dissolved gelatin milk and let cool until the mixture begins to thicken. Beat the egg whites with the sugar until stiff and fold into the cooled chocolate mass.
  • Coat three pastry strips with cream and put together. Cover with the remaining cream and refrigerate at least 2 hours. Before serving, sprinkle with grated chocolate and powdered sugar.

For croissant lovers..this is a very easy and elegant dessert, puff pastry filled with chocolate, then drizzled with a smooth chocolate glaze on the top.

2 puff pastry sheets, thawed (use one 17-ounce box)
1 -1 1/2 cup milk chocolate chips
2 ounces semisweet chocolate, broken into pieces
1 egg, slightly beaten
2 tablespoons butter
1 cup confectioners' sugar
2 tablespoons hot water (more or less as needed)
confectioners' sugar, for sprinkling

Steps:

  • Set oven to 350°F.
  • Grease 2 baking sheets.
  • Unfold one sheet of puff pastry onto a lightly floured surface, then roll out to make a 10-inch square.
  • Cut into four even squares.
  • Place 2-3 tablespoons milk chocolate baking chips in the center of each square.
  • Brush the edges lightly with the beaten egg.
  • Fold each square into triangles, press the edges to seal.
  • Place on the baking sheets 2-inches apart.
  • Repeat with remaining puff pastry sheet.
  • Bake for about 15-17 minutes or until puffed and golden brown.
  • Cool on baking sheets for about 3 minutes, then remove to wire racks to cool completely.
  • In a small microwave-safe bowl melt the 2 ounces semisweet chocolate with 2 tablespoons butter on HIGH for about 25-30 seconds, stirring once and until smooth. until smooth.
  • Stir/whisk in the confectioners sugar until combined.
  • Add in water until the icing is smooth and desired consistency for drizzling.
  • Drizzle over the pastries.
  • Sift lighty with confectioners sugar if desired.
