Squeeze lime and lemon juice into jar. Measure and pour tequila, triple sec and prickly pear syrup into jar. Seal and shake vigorously about 10 seconds. Pour cocktail into a glass with fresh ice.

- For the prickly pear syrup, scoop the flesh out of the Prickly Pear (2) and roughly chop it. Combine it with the Water (1 1/2 cup) and Granulated Sugar (1/2 cup) in a saucepan. Bring to a boil, then reduce to a simmer and cook for 10-15 minutes. Strain out solids.
- To salt the glasses, prepare one plate with a bit of water, and another plate with a handful of Salt (to taste). Dip the glass in water plate, then dip the glass on the salt plate.
- Slice 1/4 inch off of each end of the Lime (1) and cut it in half, lengthwise. Set one of the halves cut side-down?? on the cutting board, slice it at an angle, lengthwise to make lime wedges and set aside.
- For each drink, combine 1 oz of the prickly pear syrup, plus the Lime Juice (1.5 fluid ounce), Tequila (2 fluid ounce), Orange Juice (0.5 fluid ounce) and Cointreau (0.5 fluid ounce) in a cocktail shaker. Add a scoop of Ice (1 handful) and shake for 10 seconds. Serve over ice with extra Lime Wedge and Fresh Mint (1 sprig).
