2 carrots (peeled and quartered lengthwise)
2 zucchini (peeled and quartered lengthwise)
2 cups White vinegar
2 cups water
0.25 cup kosher salt
2 bay leaves
0.75 cup sugar
1 lemon (zested and juiced)
1 teaspoon peppercorns
1 teaspoon Coriander

Steps:

  • Blanch carrots and zucchini for 2 to 4 minutes. Cool in ice water, then put in assemble standing straight in 2 glass jars.
  • Make the brine: Boil 2 cups each white vinegar and water, 1/4 cup kosher salt, 2 bay leaves, 3/4 cup sugar, the zest and juice of 1 lemon, and 1 teaspoon each peppercorns and coriander seeds; pour over the vegetables, then let cool. Chill at least 4 hours.

35 ounces Mixed Vegetables (red bell peppers, onions, caulifower florets)
Sea salt
4 cups white wine vinegar
4 bay leaves
8 cloves
1 tablespoon peppercorns
1 tablespoon Coriander
1 tablespoon allspice
1 tablespoon Mustard seed
2 sprigs flat-leaf parsley

Steps:

  • Slice the peppers and remove the seeds. Slice the onions.
  • Put the vegetables in a dish and sprinkle with a good layer of sea salt, weigh down with a plate and leave overnight.
  • Rinse the vegetables in cool running water and dry thoroughly.
  • Heat the vinegar with the bay leaves and spices and bring to a boil. Cook steadily for 10 minutes, adding the parsley for the last 2 minutes, then remove from the heat and leave to stand until cold.
  • Pack the vegetables in cold sterilised jars. Strain in the cold vinegar mixture ensuring that the vegetables are completely covered. Cover and seal tightly. Keep in a cool, dark place for at least 1 month before using. Once opened, keep in the refrigerator and use within 1 week.
