Creamy Mashed Sweet Potatoes Recipe | Allrecipes image

This is a healthier and not-so-sweet option for those who prefer sweet potato fries to sweet potato pies. I use organic ingredients, but it is not required!

4 large sweet potatoes, peeled and cut into 1-inch cubes
4 ounces Neufchatel cheese (such as Organic Valley®), softened
½ teaspoon sea salt, or to taste

Steps:

  • Place potatoes into a large pot and cover with cold water; bring to a boil. Reduce heat to medium-low and simmer potatoes until tender, about 20 minutes; drain and transfer potatoes to a large mixing bowl.
  • Beat potatoes with an electric mixer until smooth; add cream cheese and beat again until smooth. Season potatoes with sea salt.

3 pounds Yukon gold or red potatoes, peeled (if desired) and cut into 2-inch pieces (9 medium)
¼ cup butter
1 teaspoon salt
½ teaspoon ground black pepper
⅔ - ¾ cup milk, whipping cream, half-and-half, or light cream
Butter, melted (optional)
Snipped fresh chives (optional)

Steps:

  • In a large saucepan cook potatoes, covered, in lightly salted boiling water for 20 to 25 minutes or until tender; drain. Press through a ricer, mash with a potato masher, or beat with an electric mixer on low speed.* Add the 1/4 cup butter, the salt, and pepper. Gradually beat in milk to make mixture light and fluffy. If desired, serve with additional butter and snipped chives.

If making ahead, cover tightly with plastic wrap and store in the refrigerator for up to one day. Right before serving, microwave on high until warmed through. Garnish with chives.
