Anise Cutout Cookies Recipe: How to Make It image

Mother prepared these soft cookies for holidays and special-occasion meals. My seven siblings and I gobbled them up as fast as she made them. I still can't resist the cinnamon-sugar coating. —Jerri Moror, Rio Rancho, New Mexico

Yield about 5 dozen.

Number Of Ingredients 10

2 cups shortening
1 cup sugar
2 large eggs
2 teaspoons aniseed
6 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/4 cup apple juice
1/2 cup sugar
1 teaspoon ground cinnamon

Steps:

  • In a bowl, cream shortening and sugar until fluffy; add eggs and aniseed. Combine flour, baking powder and salt; add to the creamed mixture. Add apple juice and mix well. , On a floured surface, knead until well blended, about 4-5 minutes. Roll dough to 1/2-in. thickness; cut into 2-in. shapes. Place on greased baking sheets. , Bake at 375° for 12-16 minutes or until lightly browned. Combine sugar and cinnamon; roll cookies in the mixture while still warm. Cool on wire racks.

These cookies have been made in my family for 4 generations now and I must say that they are a family favorite above all others. If you love the flavor of anise I think you will surely Love these cookies.

Number Of Ingredients 9

1 1/3 cup(s) butter, room temperature
1 1/2 cup(s) sugar
1 1/4 teaspoon(s) vanilla extract
1 1/4 teaspoon(s) anise extract
2 - eggs
6-8 teaspoon(s) milk
4 cup(s) all-purpose flour
3 teaspoon(s) baking powder
1/2 teaspoon(s) salt

Steps:

  • Thoroughly cream butter,sugar vanilla and anise. Add eggs; beat til light and fluffy
  • Stir in milk
  • Gradually add dry ingredients(I use my kitchen aid stand mixer) til blended. Divide dough in half and chill several hours
  • When ready to bake; On lightly floured surface, roll to 1/4 in thickness. Cut into your favorite shapes. Bake on greased cookie sheet spaced 1 in. apart for 9-11 minutes.(depending on how thick or thin you roll them) @ 375 degrees. Cool slightly, remove from pan to rack to decorate. Frost as you wish..............Yields 3-4 dozen depending on thickness and size of cutter
  • Frost with your favorite Buttercream frosting Hint: I add anise to my frosting to compliment the flavor in the cookie...Nana always did. Enjoy!

This is my grandmother's recipe, but since I didn't have a chance to know her I think of them as my mom's cookies. She uses 5 pounds of flour in her batch because she makes them once a year for the family reunion, so I whittled her recipe down into a 4 dozen batch. The amount of anise is up to you. If you think you didn't add enough anise to the cookies, you can add some to the icing. I like to leave some of them unfrosted since they're pretty darn good plain.
