Yield 2 Cups

Number Of Ingredients 9

1 tablespoon olive oil
1 small onion, chopped
½ pound boneless pork, cut into 1/2-to 1-inch cubes
1 tablespoon chopped fresh sage, or 1 tsp dried
1 tablespoon chopped fresh thyme, or 1 tsp dried
Salt and freshly ground pepper
½ cup low-sodium chicken broth
1 cup tomato sauce
1 cup frozen peas

Steps:

  • Prep time: About 10 MinutesCooking time: About 25 MinutesIn a medium saucepan, heat oil over moderate heat. Add onions and cook 5 minutes, stirring frequently. Add pork and brown about 4 minutes (if it's already cooked, add with the tomato sauce; see below). Stir in herbs, salt, and pepper and cook 5 minutes. Pour in chicken broth and tomato sauce and simmer 5 minutes. Add peas, taste for seasoning, and let cook another 5 minutes, or until the pork and peas are tender.FREEZE-EASY: Place cooled sauce in zip-close plastic bags or containers with tight-fitting lids. After thawing, reheat in a saucepan over low heat until simmering; or follow your microwave's directions.How kids can help: Measure ingredients.

Number Of Ingredients 8

1/2 small onion, thinly sliced
1 garlic clove, minced
1 tablespoon butter
4 bone-in pork loin chops (6 ounces each), trimmed
1 can (8 ounces) tomato sauce
1/4 cup dry white wine or chicken broth
1 teaspoon dried oregano
1/8 teaspoon pepper

Steps:

  • In a large nonstick skillet, saute onion and garlic in butter until tender. add pork chops; brown on both sides. In a small bowl, combine the tomato sauce, wine or broth, oregano and pepper; pour over chops. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until tender.
