Poor man's cake is an old-fashioned dessert that was especially popular in the 1930s and is sometimes known as Depression Cake, because it didn't call for butter, milk, or eggs.

Number Of Ingredients 11

3 cups raisins
2 cups sugar
3 cups hot water
1/4 cup shortening (Crisco)
2 tsp cinnamon
1/2 tsp cloves
1/4 tsp allspice
3 1/2 cups flour
2 tsp baking soda
1 tsp salt
(optional 1 cup chopped nuts)

Steps:

  • Put the first 7 ingredients into a pot and bring to a boil. Let simmer and cook slowly for 15 minutes, stirring throughout.
  • Remove from heat and let cool.
  • Preheat the oven to 325 degrees F and grease a bundt pan.
  • Add in the dry ingredients and stir just until all the ingredients are mixed together.
  • Pour into the bundt pan and bake for an hour, or until a toothpick comes out clean (this was around 50 minutes for me).
  • Cool the cake in the pan before removing it.
  • Frost the top with a buttercream frosting and nuts sprinkled on top, or dust with powdered sugar.

My mother made this cake for us when we were growing up, and it's a family favorite. It comes from WWII era, because she grew up during that time when things were rationed, and so they had to invent recipes that didn't use milk or eggs. This is a delicious cake, & the icing goes with it perfectly. It's a small cake, and bakes up into an 8 X 8 square pan, so if you want a 13 x 9 inch, or a layer cake, double the recipe. It can also be made into cupcakes, or a bundt.

  • Pour the rest of the icing over the top of the cake, using a knife to spread down the sides. Excess frosting will drip through the rack or jelly roll pan. Transfer cake immediately from the rack to a platter by sliding it carefully. Let frosting cool and set before slicing and serving.
