POACHED SALMON RECIPE - NYT COOKING
This recipe ran with a 1989 article about Georgette Mosbacher, a cosmetics industry executive who frequently entertained for business from her Washington, D.C., home. It’s an elegant dish for a large group — the recipe ultimately serves 12 — but it comes together quickly. Serve it, as a commenter suggests, with a homemade tartar sauce.

COLD POACHED SALMON RECIPE - ANDREW ZIMMERN | FOOD & WINE
Andrew Zimmern’s Kitchen AdventuresBoiling Water 101 was a class I taught for 10 years at a local school in Minnesota. This recipe was one I designed to teach a basic skill but also deliver complex flavors and serve as a touchstone for family meals or entertaining. You really need to practice braising/poaching/blanching as often as you can because wet-heat cooking is much more subtle than dry-heat cooking but so much easier. Recipes like this will change your outlook on cooking for sure. Get wet! —Andrew Zimmern Slideshow: Great Ideas for Salmon

SIMPLE POACHED SALMON RECIPE | EPICURIOUS
_**Editor's note:** The recipe and introductory text below are from_ [The Gourmet Slow Cooker: Simple and Sophisticated Meals from Around the World](http://astore.amazon.com/epistore-20/detail/1580084893) _by Lynn Alley. For more on slow cooking, [click here](/articlesguides/howtocook/primers/slowcooking)._ Poaching salmon, or any fish for that matter, in the slow cooker is a no-brainer. Although it isn't a traditional dish for long, slow cooking, it is one of the things that the low, even temperatures of the slow cooker does well with. Poached salmon, needing no oil to cook, makes a light lunch paired with lemon rice, steamed vegetables, and salad, or a sumptuous dinner with herbed mashed potatoes and grilled vegetables.

15-MINUTE POACHED SALMON | NOURISHING MEALS®
Aug 24, 2009 · Try chopped kale or spinach. The trick to keeping the salmon tender is to keep the heat low in order to produce a gentle simmer. If you turn the heat too high the fish will toughen up. I use a 12-inch oval au gratin pan to poach the fish, but a deep 11-inch skillet work well too. Serve over cooked brown rice noodles or zucchini noodles!
