Steps:

  • Cook 2 smashed garlic cloves and 1/4 teaspoon red pepper flakes in olive oil in a large skillet over medium-high heat, 1 minute. Add 1 chopped plum tomato and 1 sprig rosemary and cook 2 minutes. Add 2 cans drained, rinsed cannellini beans and cook, partially smashing the beans with a spoon, 5 minutes. Remove the rosemary. Stir in 1/2 cup water and some chopped parsley; season with salt. Sprinkle with parmesan and broil until golden. Drizzle with olive oil.

Great hearty soup for a cold night. Double for large groups. It's always a favorite! Everyone asks me for this recipe every time I make it. Serve with grated Monterey Jack cheese, sour cream, or salsa.

1 tablespoon vegetable oil
1 onion, chopped
1 clove garlic, chopped
3 (16 ounce) cans great Northern beans
5 cups chicken broth
4 cups shredded cooked chicken
1 (4 ounce) can chopped green chile peppers
2 tablespoons ground cumin
1?½ teaspoons chili powder
¼ teaspoon cayenne pepper
¼ teaspoon dried oregano
¼ teaspoon ground cloves

Steps:

  • Heat oil in a 5-quart stockpot over medium heat; cook and stir onion and garlic until tender, about 5 minutes.
  • Stir great Northern beans, chicken broth, chicken, green chile peppers, cumin, chili powder, cayenne pepper, oregano, and cloves into the stockpot. Bring to a boil; reduce heat to low and simmer until flavors combine, about 1 hour.
