This recipe is taken from Emeril Lagasse's book - 'From Emeril's Kitchen'. The preface to the recipe states "This spicy Portuguese sauce is an awesome addition to any dish. Serve it as a condiment for seasoning soups or other pasta dishes to totally kick them up." The Portuguese had a huge influence on African cooking. 3/4 cup olive oil
2 jalapeno peppers, coarsely chopped, including stems and seeds
1 poblano pepper, coarsely chopped, including stems and seeds
1 1/2 teaspoons red pepper flakes
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 1/2 teaspoons garlic, minced

Steps:

  • Combine all of the ingredients except the garlic in a medium heavy saucepan and cook, stirring, over high heat for 4 minutes.
  • Add the garlic, remove from the heat, and let cool to room temperature.
  • Pour into a food processor or blender and pulse until smooth.
  • Strain through a fine-mesh strainer.
  • Refrigerate in an airtight container for 7 days before using.

At the chicken emporium Bantam & Biddy in Atlanta, chef Shaun Doty makes a simple, vibrant version of piri piri sauce with sautéed vegetables, garlic and two kinds of chiles.

2 tablespoons extra-virgin olive oil
1 large red bell pepper, seeded and finely chopped
1/2 onion, finely chopped
3 fresh red chiles, such as cayenne—stemmed, seeded and finely chopped
3 Thai chiles, finely chopped
3 garlic cloves, minced
1 tablespoon sweet smoked paprika
2 tablespoons red wine vinegar
1 tablespoon fresh lemon juice
1/4 cup water
Kosher salt
Freshly ground pepper

Steps:

  • In a large skillet, heat the olive oil until shimmering. Add the bell pepper, onion, cayenne chiles, Thai chiles, garlic and paprika and cook over moderate heat, stirring occasionally, until the vegetables are softened, about 12 minutes.
  • Scrape the mixture into a blender and let cool slightly. Add the vinegar, lemon juice and water and puree until almost smooth. Season the sauce with salt and pepper and transfer to a bowl. Let stand at room temperature for about 1 hour before serving.

I love churrasqueira chicken and have been looking for a recipe to make it myself. I found this on Breakfast Television Toronto's web site. They got the recipe from Roasty Chicken Churrasqueira which is in the town of Maple just north of Toronto. A friend told me that she's used this sauce for fish and shrimp, too. I've tried it on shrimp and it's wonderful. Simply marinate the shrimp for an hour and then drain the shrimp, discard the sauce and grill the shrimp on the barbie.
