Make your own hot cocoa mix or hot chocolate mix to keep in the pantry with this easy recipe. All you have to do is add hot water when you want a cup!

confectioners' sugar

1 c.

unsweetened cocoa powder

2 c.

powdered milk or instant nonfat dry milk

Steps:

  • In a large bowl, sift the confectioner’s sugar, then the unsweetened cocoa, to get rid of any lumps.  Stir in the powdered milk, and whisk well until everything is combined.  Add mini marshmallows to the container, if desired. This can be kept in the pantry for 6 months.

unsweetened cocoa powder

1 c.

powdered milk

1 c.

milk chocolate chips

3/4 c.

chopped hard peppermint candies

1 c.

mini marshmallows

Steps:

  • In a 1-quart jar, layer cocoa powder, powdered milk, chocolate chips, peppermint candies, and mini marshmallows. Prep time: 5 minutes. Total time: 10 minutes. Makes 6 to 8 servings. Whisk the Peppermint Hot Cocoa Mix with 4 cups cold water in a medium saucepan. Cook over medium-low heat, whisking, until warm and smooth and the candies and marshmallows are melted, 6 to 8 minutes (do not let the mixture boil). Ladle into mugs.

  • Put the chopped chocolate in a heatproof bowl and set over a saucepan filled with a few inches of simmering water over low heat. Let melt, 3 to 4 minutes, then stir until smooth. Remove the bowl from the pan and let cool slightly.  Combine the flour, hot cocoa mix, espresso powder, baking powder, baking soda and salt in a medium bowl  and whisk to get rid of any lumps.  Combine the butter and sugar in a large bowl and beat with a mixer on medium-high speed until light and smooth, 2 to 3 minutes. Add the eggs, one at a time, and beat until combined. Beat in the vanilla. With the mixer on low speed, gradually add the melted chocolate. Increase the speed to medium high and beat until smooth and light, about 1 minute. With the mixer on low speed, add the flour mixture and beat until just combined, 30 seconds to 1 minute. Stir in the white chocolate chips. Cover the dough and refrigerate until it just begins to firm up, about 30 minutes. Preheat the oven to 350°. Line 2 baking sheets with parchment paper. Scoop the dough into balls (about 1 tablespoon each) and place on the baking sheets, about 2 inches apart. Bake until the edges just begin to set, 9 to 10 minutes.  Remove from the oven and place a marshmallow half on the center of each cookie, cut-side down. Continue baking until the edges of the cookies are set and the marshmallows are stuck on, 2 to 3 minutes more. Let cool 5 minutes on the pans; remove to racks to cool completely.

  • Whisk the cocoa powder and sugar in a large bowl to break up any clumps. Whisk in the flour, baking powder, baking soda and salt.  In a separate bowl, whisk the eggs, buttermilk and melted butter. Gradually fold the wet ingredients into the dry ingredients until just combined. Fold in the chocolate chips. Heat a large skillet or griddle over low to medium-low heat and smear a little bit of butter over the surface. Add 1/3-cup scoops of batter to the pan and cook until small bubbles form on the surface and the edges look dry, 2 to 2 1/2 minutes. Flip and cook until golden brown on the bottom and set in the middle, about 2 more minutes. Repeat with the remaining batter, adding more batter to the pan if necessary.  For the chocolate sauce: Heat the heavy cream in a small saucepan until hot but not boiling. Remove from the heat and add the chopped chocolate, stirring until melted and smooth. Top the pancakes with the chocolate sauce and marshmallows.

  • To make the basic hot chocolate, combine milk with half-and-half in a small saucepan. Warm over medium-low heat, then stir in chocolate chips. Stir until melted (though there will still be lovely particles of chocolate throughout.) If it's too chocolatey for you, splash in a little more milk. If it's not quite sweet enough for you, add 1 teaspoon sugar. Serve in mugs with whipped cream. VARIATIONSOrange Hot Chocolate: Add 4 slices of orange rind as you warm the milk mixture. Add a splash of orange syrup if you have it, but it isn't necessary.Raspberry Hot Chocolate: Add 3 tablespoons raspberry syrup to the hot chocolate. Drop a couple of raspberries into each cup. Mint Hot Chocolate: Drop 1 to 2 miniature peppermint patties into each mug before adding hot chocolate. Stir to melt.
