150 g (5½ oz) unsalted butter, softened
115 g (4 oz/½ cup) caster (superfine) sugar
1 teaspoon natural vanilla extract
3 eggs
155 g (5½ oz/1¼ cups) self-raising flour, sifted
125 ml (4 fl oz/½ cup) milk
45 g (1? oz/½ cup) desiccated coconut
1/2 teaspoon ground cardamom
300 g (10½ oz) sour cream
6 peaches, peeled and sliced or 2 × 410 g (14½ oz) tins peach slices, drained and patted dry
75 g (2½ oz/? cup) raw (demerara) sugar

Steps:

  • 1. Preheat the oven to 170°C (325°F/Gas 3). Lightly grease a 16 × 26 cm (6¼ × 10½ inch) baking tin and line the base with baking paper, extending the paper over the long sides for easy removal later.

    2. Cream the butter, caster sugar and vanilla in a large bowl using electric beaters until pale and fluffy. Add two of the eggs, one at a time, beating well after each addition. Fold in the flour and milk, in batches, alternating between the two. Fold in the coconut and cardamom. Use a spatula to spread the mixture into the prepared tin. Bake for 20 minutes, or until a skewer inserted in the centre comes out clean. Allow to cool slightly.

    3. Meanwhile, increase the oven temperature to 200°C (400°F/Gas 6). Mix the sour cream and the remaining egg in a small bowl and spread over the cooked base. Arrange the peaches over the sour cream filling. Sprinkle with the raw sugar and bake for 30–40 minutes, or until golden and set on top. Allow to cool in the tin before slicing into fingers.

  • Spread peach slices into a baking dish in a single layer. Stir brown sugar substitute, pecans, flour, and vanilla extract together; spread over the peach slices.
  • Bake in preheated oven until the peaches are heated through, 20 to 30 minutes.
