Brown Sugar Peach Cobbler for Two Recipe - BettyCrocker.com image

Try this delicious cobbler for two people! Did you know that cobbler is similar to a crisp, but has a topping similar to small biscuits, meant to look like "cobblestones"?

Provided by Betty Crocker Kitchens

Total Time 40 minutes

Prep Time 20 minutes

Yield 2

Number Of Ingredients 13

1/2 cup Gold Medal™ all-purpose flour
1 tablespoon packed brown sugar
1/2 teaspoon baking powder
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
2 tablespoons butter, melted
3 tablespoons low-fat buttermilk
1 1/2 cups fresh or frozen (thawed, drained) sliced peaches, cut into chunks
1/4 cup packed brown sugar
1/4 teaspoon ground cinnamon
1 tablespoon cornstarch
1 teaspoon granulated sugar
1/8 teaspoon ground cinnamon

Steps:

  • Heat oven to 400°F. Spray 2 (12-oz) ovenproof ramekins with cooking spray.
  • In large bowl, mix flour, 1 tablespoon brown sugar, the baking powder, 1/4 teaspoon cinnamon and the salt. Make a well in center, and pour in butter and buttermilk. Stir until mixture begins to come together; knead 3 to 4 times to form dough; set aside.
  • In medium bowl, toss Filling ingredients. Divide filling evenly between ramekins. Pinch off teaspoon-size pieces of dough, and scatter evenly over filling. In small bowl, mix Topping ingredients; sprinkle over dough.
  • Bake 20 to 25 minutes or until filling is bubbly and dough is cooked through. Cover with foil if dough is getting too brown. Cool slightly before serving.

  • I tried boiling the peaches to peel them, as suggested, but that didn't quite work out. Instead, I just peeled them with a knife, which worked out just fine and wasn't a hassle at all. When choosing peaches, be sure that they do not have any green on the skin -- this means the fruit hadn't developed before being picked, and it won't get any sweeter afterwards. The crust is unbelievable. When you pour in the boiling hot water, it immediately puffs up into a thick dough. This bakes into a thick, crumb-cake-like topping. The sugar amounts can be adjusted as desired. I found it to be just right. It is incredible with a scoop of vanilla or butter pecan ice cream (or both). My "southern" gentleman companion, who has had his share of peach cobblers, really enjoyed it!
