2-1/2 cups all-purpose flour
1 teaspoon salt
1 cup boiling water
1 bunch green onions, finely chopped
1/2 cup canola oil
1 tablespoon sesame oil
1 small onion, thinly sliced
2 garlic cloves, minced
1 teaspoon minced fresh gingerroot
1 package (15 ounces) refrigerated beef roast au jus, drained and chopped or 2 cups chopped cooked roast beef
3 tablespoons soy sauce
2 tablespoons hoisin sauce
1 tablespoon honey

Steps:

  • Place flour and salt in a large bowl; stir in boiling water until dough forms a ball. Turn onto a floured surface; knead until smooth and elastic, 4-6 minutes. Place in a large bowl; cover and let rest for 30 minutes., Divide dough into 8 portions; roll each portion into an 8-in. circle. Sprinkle each with 1 tablespoon green onion. Roll up jelly-roll style; holding 1 end of the rope, wrap dough around, forming a coil, pinching to seal. Flatten slightly. Roll each coil to 1/8-in. thickness., In a large cast-iron or other heavy skillet, heat 1 tablespoon canola oil. Cook pancakes, 1 at a time, over medium-high heat until golden brown, 2-3 minutes on each side, adding more oil as needed; keep warm. , In the same skillet, heat sesame oil over medium-high heat. Add onion, garlic and ginger; cook and stir until tender, 5-6 minutes. Add the remaining ingredients; cook until heated through, 3-4 minutes longer. Spoon about 1/4 cup beef mixture down center of each pancake. If desired, sprinkle with sliced green onions. Roll up tightly and serve.

A delicious brunch snack that can be found in many Chinese breakfast shops. Its various names include 'cong you bing,' 'jiu cai bing,', 'scallion pancakes,' 'green onion pancakes,' etc. This particular recipe is passed down through my mother's family, and brings back many good, yummy memories! Can serve with hot-sour sauce, or your favorite Chinese sauce.

¼ teaspoon salt
¾ cup warm water
1 cup all-purpose flour
¼ teaspoon vegetable oil
¼ cup all-purpose flour
1 tablespoon vegetable oil
1 tablespoon Asian (toasted) sesame oil, or as needed
½ cup finely chopped green onion
1 tablespoon vegetable oil, or as needed

Steps:

  • Dissolve salt in warm water, and mix in 1 cup of flour to make a soft dough. Turn the dough out onto a well-floured work surface, and knead until slightly springy, about 5 minutes. If the dough is sticky, knead in 1/4 teaspoon of vegetable oil. Divide the dough into 8 equal-size pieces, and keep the pieces covered with a cloth.
  • In a bowl, mix 1/4 cup of flour with 1 tablespoon vegetable oil to make a mixture like fine crumbs.
  • On a floured work surface, roll a piece of dough out into a thin square about 5x7 inches in size, brush the dough with toasted sesame oil, and sprinkle lightly with about 1 1/2 teaspoon of the flour-oil mixture. Sprinkle about 1 tablespoon of chopped green onion onto the dough, and spread the onion out evenly. Starting with a long end, roll the dough up into a rope shape, and pinch the seam and the ends closed. Roll the rope shape into a flat spiral, and press lightly with your hands to compact the spiral and keep it from unrolling.
  • Place the spiral down onto the floured work surface, and gently roll it out into a pancake with the onions folded inside, turning the pancake over often as you roll it out. Roll gently and turn often to avoid making holes in the pancakes. Finished pancakes should be about 5 inches in diameter. Repeat with the rest of the dough pieces, making 8 onion pancakes.
  • Heat a non-stick skillet over medium heat, and brush with vegetable oil. Pan-fry each pancake in the hot skillet until golden brown on both sides, about 5 minutes per side. Cut into wedges and serve warm.

  • Heat 1 quart vegetable oil in wok to about 350 degrees. Add rolls one at a time. Do not crowd. Cook in batches of 8 to 10 until deep golden brown. Drain on paper towels. Regulate heat as necessary to maintain temperature. Don’t let temperature go over 375 degrees. Cut in half diagonally and serve warm with a Chinese mustard for dipping and one of the soy-sauce based dipping sauces listed above. Cutting the rolls in half diagonally facilitates absorption of the sauce into the filling when the roll is dipped. Also, it makes the rolls go farther and be easier for people to handle at a party, etc. Cooled rolls can be reheated at 350 degrees for 10 minutes, wrapped in foil.

  • To Cook Using a small pot, heat 2 cups of oil to medium heat. Gently place in 1 wonton wrapper at a time, flipping after 30 secs, then flipping again until golden brown. Remove from pan and drain. Repeat for the remaining wonton wrappers and set aside. In a medium bowl, place plain flour, mung bean flour, ½ tsp salt and water. Mix well to make a thin batter. Using a crepe pan, heat ½ tsp of vegetable oil to medium-low heat. Pour in approximately ½ cup of the batter mixture, rolling it around the pan to make a thin layer. Cook for 2 mins. Whilst cooking the batter, mash together the silken tofu, cornflour and ½ tsp salt, until fairly smooth. Spread a thin layer of the silken tofu mixture onto the pancake (for texture and as an egg replacement), top with a pinch of sesame seeds and spring onion, then cook for 1 min. Flip the pancake over. On the cooked side, spread a thin layer of dou ban jiang paste followed by Lee Kum Kee Hoisin Sauce (about 1 tsp each, or to your liking). Add sesame seeds, spring onion, lettuce, coriander and top with the crispy wonton wrappers cooked earlier. Once the pancake is cooked, fold the bottom side up to the middle, right side in, left side in and finally roll the jian bing over to have all folds underneath. You can enjoy the pancake whole or cut in half to serve.
