This is one of my favorite ways to eat tofu. Keep some marinating in the refrigerator, then grill or pan-fry at will.

Number Of Ingredients 8

1 tablespoon Asian sesame oil
1/4 cup soy sauce
2 tablespoons mirin (sweet Japanese rice wine)
1 tablespoon rice wine vinegar
1 tablespoon minced or grated fresh ginger
1 pound firm tofu
1 tablespoon canola oil or peanut oil
Additional soy sauce or marinade for topping

Steps:

  • Combine all of the marinade ingredients in a 2-quart bowl. Whisk together well.
  • Drain the tofu and pat dry with paper towels. Slice into 1/2-inch thick slabs, and blot each slab with paper towels. Add to the bowl with the marinade, and gently toss to coat. Cover and refrigerate for 15 minutes to an hour, or for up to a day.
  • To pan-fry the tofu, heat the oil over medium-high heat in a large, heavy nonstick skillet. When the oil is hot, add the tofu in one layer (you may have to do this in batches). Cook on one side for one to two minutes, until lightly colored. Using tongs, turn the tofu over and cook for another one to two minutes, or until lightly colored on the other side. Remove from the pan, and serve with additional marinade or soy sauce. To grill the tofu, prepare a medium-hot grill. Brush the grill with oil, and grill until grill marks appear, 1 1/2 to 2 minutes per side. Remove from the heat, and serve with additional marinade or soy sauce.

This recipe is very easy to double, though you don't need quite double the marinade: About 1 1/2 times the marinade is perfect for four packages of tofu.

2 (14 ounce) packages extra-firm tofu, drained
½ cup sherry vinegar
½ cup low-sodium soy sauce
? cup olive oil
1 teaspoon garlic powder
½ teaspoon kosher salt
½ teaspoon cayenne pepper
½ teaspoon dried marjoram or thyme
¼ teaspoon black pepper

Steps:

  • Wrap tofu in a clean dish towel and weight it with something heavy such as a large can; leave it to drain for 30 minutes.
  • Meanwhile, mix together remaining ingredients in a bowl.
  • Cut each piece of tofu crosswise into 6 thick slices and put it all in a baking dish. Pour marinade over tofu, turning to coat, and chill, covered, turning occasionally, at least 30 minutes or up to 48 hours. Longer is better, but shorter is totally fine.
  • Preheat a gas grill on high heat (450 degrees F to 650 degrees F) 10 minutes, then reduce heat to medium (325 degrees F to 375 degrees F)--or do whatever the equivalent is if you're using charcoal. Oil grate.
  • Transfer tofu from marinade (letting excess drip off and reserving marinade) to grill with a spatula. Cover grill and cook tofu, turning once, until well browned but before grill marks get black, 10 to 15 minutes total. Transfer tofu to a platter and cover with foil to keep warm.
  • Bring reserved marinade to a boil in a saucepan and boil until it reduces to about 1 cup, about 2 minutes. Pour over tofu and serve hot, warm, or at room temperature.

PAN GRILLED TOFU WITH MISO GLAZE RECIPE BY JOHN - COOKEATSHARE
This is an outstanding and pretty appetizer to serve before any asian meal. Our kids, who are somewhat indifferent to tofu, gobbled these up. They are slightly sweet and salty, with enough additional flavor to be interesting. I made these along with a tried and true teriyaki chicken recipe, which I grilled to perfection, and I think we all preferred the tofu. That's high praise in my family!

  • In a non stick sauce or small saute pan, add the miso, mirin (sweet japanese rice wine), sugar, and dashi stock. (You can purchase dashi granules at an asian supermarket or you can make with bonito (fish) flakes). Cook over low heat, stirring constantly with a rubber spatula until the sugar dissolves. Add the egg yolk and mix well until the glaze is glossy. Set aside. Remove both pieces of tofu from the packages. Cut each down the middle as if you were making a sandwich with it. Then cut again into 4 equal sections along the long side of the rectangle. You should end up with eight equal size pieces from each package the same shape as is shown in the picture above. Drain on paper towels and also pat with towels on top to remove as much water as possible. Heat half of the oil in a 12 inch, nonstick pan over medium. Add half the tofu and saute on both sides until lightly browned (about 2 minutes per side). Remove to paper towels. Add the remaning oil and then repeat with the remaining tofu. Spear each piece of tofu with a wooden skewer (double pronged would be ideal, but I used regular skewers) and put on a serving plate. Using a table or butter knife, carefully spread the miso glaze on top of the tofu. Serve while still warm if possible. YUM!

THE BEST PAN-FRIED TOFU RECIPE - FOOD.COM
I have had MANY people ask me how I pan fry my tofu and get it so crispy and firm. There are a few reasons why:-).
