Fresh whipped cream is one of life's great pleasures. And once you find out how easy it is to make at home, you'll never go back to the canned stuff again. When it comes to picking the best whipped cream ingredients, we found that organic heavy cream whipped lighter and fluffier and tasted more pure than conventional cream. Check labels and choose cartons that contain only cream (some have added stabilizers). When you're ready to whip, start with just 2 tablespoons of powdered sugar for every 2 cups of cream. You can always add more if you want it sweeter. Add a splash of vanilla (or bourbon or amaretto) for extra flavor then serve over chocolate ice cream, atop a custardy pie or dolloped on top of fresh berries. 2 cups heavy cream (preferably organic)
2-3 tablespoons powdered sugar (depending on how sweet you like it)
½ teaspoon pure vanilla extract (optional)

Steps:

  • Combine cream, powdered sugar, and vanilla, if using, in the bowl of a stand mixer fitted with the whisk attachment.
  • Beat on medium until cream holds soft peaks, about 4 minutes (watch carefully, as all mixers and pints of cream are not created equal). Whipped cream can be made up to 2 hours ahead.
  • Refrigerate until ready to use. Stir gently with a spatula before serving.

Variations on this basic version abound: add citrus zest, matcha (green tea) powder, cocoa, almond extract, pumpkin pie spice, mmm...! Plan ahead, because the coconut milk needs to chill overnight.

1 (14 ounce) can unsweetened coconut milk
2 tablespoons white sugar, or to taste
1 teaspoon pure vanilla extract

Steps:

  • Refrigerate can of coconut milk, 8 hours or overnight.
  • Place metal mixing bowl and beaters in the refrigerator or freezer 1 hour before making whipped cream.
  • Open can of coconut milk, taking care not to shake it. Scoop coconut cream solids into cold mixing bowl. Reserve remaining liquid for another use.
  • Beat coconut cream using electric mixer with chilled beaters on medium speed; turn to high speed. Beat until stiff peaks form, 7 to 8 minutes. Add sugar and vanilla extract to coconut cream; beat 1 minute more. Taste and add more sugar if desired.
