A lighter version of the Creamsicle Cake. We can finally have our cake and eat it too! Can't remember where this originated but I have served this at family dinners without anyone suspecting it was low fat. Made as presented this is 4 points per piece. Cooking time includes chilling time.

18 1/4 ounces orange cake mix (1 box)
10 fluid ounces diet orange soda
2 egg whites
6 ounces sugar-free orange gelatin, divided (2 pkgs)
1 cup hot water
1 cup cold water
3 1/2 ounces fat-free sugar-free vanilla pudding mix
1 cup nonfat milk
1 teaspoon vanilla extract
8 ounces Cool Whip Free, thawed

Steps:

  • Mix Cake mix, soda and egg whites together.
  • Pour batter into a 9 X 13 inch pan.
  • Bake as directed on box.
  • When done, use a meat fork to poke holes across the top of the entire cake.
  • Allow cake to cool.
  • In a medium bowl, mix together 1 box of the orange gelatin, 1 cup hot water and 1 cup cold water.
  • Pour gelatin mixture over top of cake.
  • Refrigerate for 2 to 3 hours.
  • Meanwhile, mix remaining box of jello, vanilla pudding mix, nonfat milk, and vanilla together. Beat well.
  • Fold whipped topping into this mixture, and spread on top of cake.
  • Chill in refrigerator until serving.

¼ pound shortening (such as Crisco®)
½ cup white sugar
2 large eggs
1 tablespoon vanilla extract, or more to taste
1 large orange, zested
1 cup self-rising flour, sifted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 7-inch cake pan.
  • Beat shortening and sugar together in a large bowl with an electric mixer until light and fluffy; add eggs one at a time, thoroughly beating each egg into the batter before adding the next. Add vanilla extract and fold orange zest into batter. Mix flour into batter until just incorporated. Pour batter into prepared cake pan.
  • Bake in the preheated oven until golden brown and a toothpick inserted into the center of the cake comes out clean, about 25 minutes. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

ORANGE DREAM BUNDT CAKE | JUST A PINCH RECIPES
To add more color to the glaze (or cake) add 2 drops of yellow food coloring & 2 drops of red food coloring. The last time I made this, I used half butter, half butter flavored shortening & only about 3 TBS of juice in the batter. It made the orange flavor a touch more mild and the cake was much more dense. If you want a thicker glaze without adding more powdered sugar, skip the fridge & let the glaze harden while the cake is on the counter. Every 10 minutes or so, use a spoon to drizzle the excess glaze back onto the cake until you're satisfied. :)
