Prep Time 20 minutes

Cook Time 3 minutes

Yield 4 pancakes

Number Of Ingredients 6

2 cups all-purpose flour
1 cup boiling water
16 teaspoons canola oil, divided
1 teaspoon salt, divided
1 bunch green onions, chopped
¼ cup canola oil, divided

Steps:

  • Combine 2 cups flour and 1 cup boiling water in a bowl. Stir with chopsticks until cool enough to handle. Massage with your hands until the mixture becomes a dough. Transfer to a flour-dusted work surface and knead for 5 minutes. Return dough to the bowl, cover with plastic wrap, and refrigerate for 30 minutes.
  • Return dough to a flour-dusted work surface. Shape into a rectangular loaf shape. Cut the dough into 4 equal-sized pieces; return 3 pieces to the refrigerator.
  • Roll 1 piece of dough out into a 10-inch circle using a rolling pin. Spread 4 teaspoons oil on the surface. Sprinkle with 1/4 teaspoon salt and 1/4 the green onions. Roll circle up into a scroll shape. Roll the scroll sideways into a cinnamon-roll shape. Press down on the roll using the rolling pin to gently flatten it into a 7-inch pancake. Repeat with the remaining dough and oil.
  • Heat 2 tablespoons oil in a wok over medium heat. Transfer the pancake to the hot wok; flip after 30 seconds. Flip again every 1 to 2 minutes until both side are golden, 3 to 5 minutes total. Cook the remaining 3 pancakes, adding 2 tablespoons oil to the skillet each time.

Onion Potato Pancakes Recipe: How to Make It image

"WHEN Grandma prepared potato pancakes, she used an old-fashioned grater, great for potatoes but not for knuckles! With homemade applesauce, this sauce, this side dish complements a meal so well. I made these pancakes for my family and often served them as a main dish for light suppers.

  • Combine flour and boiling water in a large bowl and stir to combine until a mass of dough forms. Transfer dough to a lightly floured surface and knead until smooth, slightly tacky ball forms, 3 to 4 minutes. Transfer dough ball to a medium bowl and cover with a kitchen towel or cling film. Let rest 30 minutes at room temperature, or up to overnight in the fridge.  Meanwhile, mix 2 tablespoons vegetable oil and sesame oil in a small bowl.  Make dipping sauce: in a small bowl, stir together vinegar, soy sauce, spring onions, and chilli flakes. Separate dough into four equally-sized balls. Return 3 to bowl and recover with kitchen towel or cling film. Roll remaining ball into an 8” disk, and brush with a thin layer of the oil mixture. Roll tightly, then twist into a tight spiral, tucking the outer end underneath the roll. Using the palm of your hand, flatten the spiral, then roll out again into an 8” disk. Brush the top with another thin layer of oil, and scatter with 1/4 sliced spring onions. Roll up disk again, then re-roll into spiral. Re-roll into an 8” disk, then repeat with remaining dough balls. Add ¼ vegetable oil to an 8” pan over medium-high heat until shimmering and gently add first pancake. Cook, undisturbed, until golden on one side. Flip and cook until golden on underside, about 2 to 3 minutes per side. Remove to paper-towel lined plate and season immediately with salt. Repeat with the remaining pancakes, adding more oil if necessary. Cut pancakes into triangles and serve with dipping sauce.
