OLIVE GARDEN ALFREDO SAUCE RECIPE - FOOD.COM

Olive Garden Alfredo Sauce Recipe - Food.com image

This is one of the best recipes to make your own version of Olive Garden's famous Alfredo sauce. This recipe is for a large dinner party. Please feel free to scale the recipe down for a small family. Note: Make sure you whisk in the flour early while you are melting the butter with the garlic to avoid a "floury" flavor. The flour is important to avoid a thin sauce. This sauce is very versatile. Add grilled marinated chicken for a great Chicken Alfredo. Add sautéed shrimp and scallops with Old Bay Seasoning, white wine, shrimp stock, and chopped green onions for Seafood Alfredo. Extra sauce can be frozen for later use.

Total Time 45 minutes

Prep Time 15 minutes

Cook Time 30 minutes

Yield 1 gallon, 14 serving(s)

Number Of Ingredients 8

2 quarts heavy cream
1 lb butter
2 tablespoons flour
1 lb freshly grated parmesan cheese
4 ounces Fontina cheese
3 tablespoons minced garlic
1 teaspoon salt
2 teaspoons black pepper

Steps:

  • On medium heat, add butter, garlic, and flour until butter is melted. Do not brown garlic.
  • Whisk in the heavy cream until hot.
  • Slowly add the freshly grated cheeses into the hot cream mixture. Finally add the salt and pepper. Stir often to make sure no cheese settles at the bottom.
  • Simmer until all the cheeses are melted and the sauce reaches the desired thickness. Do not let this sauce boil, or it will begin to separate and the cheeses will become grainy.
  • Serve with pasta and garnish with freshly grated pecorino romano cheese (used by restaurant), if desired.

OLIVE GARDEN PASTA E FAGIOLI RECIPE | TOP SECRET RECIPES

Olive Garden Pasta e Fagioli Recipe | Top Secret Recipes image

Menu Description: "White and red beans, ground beef, tomatoes and pasta in a savory broth." It's amazing how many lousy clone recipes for this delicious chili-like soup are floating around. Cooking message boards, and questionable sites that claim to have "actual restaurant recipes" have for years passed off numerous versions that disappoint home chefs. Other formulas leave out major ingredients that you can clearly see in the real thing, like the carrots, or ground beef, or two kinds of beans. Others don't even get the pasta right—it's clearly ditalini pasta, which are short little tubes. If you want the taste of Olive Garden's famous Pasta e Fagioli at home, this may be the only recipe that will live up to a side-by-side taste test. Beware of imitation imitations! 1. Peel and finely slice the garlic. Pick the basil leaves and tear into pieces.
    2. Place a large non-stick frying pan on the heat and pour in 4 generous lugs of olive oil. Add the garlic, shake the pan around a bit and, once the garlic begins to colour lightly, add the basil and the tomatoes. Using the back of a wooden spoon, mush and squash the tomatoes as much as you can.
    3. Season the sauce with sea salt and freshly ground black pepper. As soon as it comes to the boil, remove the pan from the heat.
    4. Strain the sauce through a coarse sieve into a bowl, using your wooden spoon to push any larger bits of tomato through. Discard the basil and garlic that will be left in the sieve, but make sure you scrape any of the tomatoey goodness off the back of the sieve into the bowl.
    5. Pour the sauce back into the pan, bring to the boil, then turn the heat down and simmer for 5 minutes to concentrate the flavours. It will be ready when it’s the perfect consistency for spreading on your pizza.
    6. Store the sauce in a clean jar in the fridge – it’ll keep for a week or so.
