The Perfect Family Recipe for Authentic Swedish Meatballs image

From my Minnesota kitchen, I'm sharing the authentic Swedish recipe for Swedish meatballs BETTER than the IKEA meatballs. These meatballs are delicious as an appetizer or with mashed potatoes. And that creamy gravy...oh so delicious!

1 pound ground beef
1 pound ground pork
2/3 cup whipped cream
1/4 cup breadcumbs
2 eggs (beaten.)
1 tablespoon butter.
1/2 onion, finely chopped
2 teaspoon nutmeg
1 teaspoons salt
3 teaspoons pepper
2 tablespoons beef bouillion
3/4 cup whipping cream
1 tablespoon flour
2 tablespoons beef bouillion, optional

Steps:

  • Put the cream into a large bowl, add the breadcrumbs, set aside.
  • In a large skillet melt the butter and add the chopped onion. Cook for about 3 minutes.
  • Add the onion, meat, egg, salt, pepper, and nutmeg to the breadcrumbs and cream.
  • Mix everything together only until well mixed...do not overmix.
  • In the same skillet as the onion, melt 4 tablespoons of butter on medium heat.
  • Using two spoons, damp hands, or a small ice cream scoop, form the meat mixture into 1 inch balls and place into the skillet. Leave room around each meatball.
  • Cook on each side turning to the next side after about 1-2 minutes. Set cooked meatballs into a pan in a low-heat 200 degrees oven while cooking the remaining. Cook meatballs to 165 degrees internally.

3/4 cup(s) seasoned bread crumbs
1 medium onion, chopped
2 large eggs, lightly beaten
1/3 cup(s) fresh parsley, minced
1 teaspoon(s) freshly ground black pepper
3/4 teaspoon(s) kosher salt
2 pound(s) ground beef
GRAVY
1/2 cup(s) all-purpose flour
2 3/4 cup(s) milk, 2% is best
2 can(s) (10 1/2 oz ea) condensed beef consomme, undiluted
1 tablespoon(s) worcestershire sauce
1 teaspoon(s) coarsely ground black pepper
3/4 teaspoon(s) kosher salt
NOODLES
1 package(s) (16 oz) egg noodles
1/4 cup(s) unsalted butter, cubed
1/4 cup(s) fresh parsley, minced

Steps:

  • Combine the first six ingredients in a large bowl, then add the beef and mix together lightly.Shape the meat into 1 1/2 inch balls.
  • Place a large skillet over medium heat. Once hot, put the meatballs in and brown on all sides (you may need to do this in batches, depending on the size of your skillet. Do not overcrowd or they will steam and not brown). As they brown, remove them to paper towels and drain; reserve the drippings in the pan.
  • GRAVY: Stir the flour into the pan and mix with the liquid in there. Cook and stir over medium to med-high heat until it gets light brown in color. Add the milk while whisking (to prevent lumping of the gravy). Then stir in the consomme, Worcestershire sauce, salt and pepper, and bring to a boil. Cook and stir for about two minutes, until thickened.
  • Reduce the heat to a medium-low and add the meatballs back into the pan with the gravy. Cook, uncovered, 15-20 minutes (or until the meatballs are completely cooked through), stirring occasionally.
  • While the meatballs are cooking in the sauce, cook the noodles according to the package directions. Drain the noodles and then toss them with the butter.
  • Serve the meatballs and gravy over the noodles and sprinkle with parsley. Enjoy!
