I found this on a different recipe site and tweaked it a little to suit our tastes. It's our favorite Mexican rice that we've tried.

Steps:
- Heat vegetable oil in a large skillet over medium heat. Stir in rice; cook and stir until rice is lightly browned and gives off a toasted fragrance, 5 to 7 minutes. Stir in the chicken broth, tomato sauce, green chiles, onion, garlic, salt, cumin, and chili powder. Bring to a boil, then reduce heat to low. Cover and simmer until rice is tender, about 25 minutes, stirring occasionally. Spread Monterey Jack cheese on top, then replace the lid and allow the cheese to melt, about 5 minutes more.

ENCHILADA RICE - EASY MEXICAN RECIPES - OLD EL PASO
Preparation. Heat the olive oil in a medium saucepan over medium heat. Add the onion and saute until soft, about 5 minutes. Pour the water into the pan. Bring to a boil. Add the rice, stir, then cover the pan and reduce the heat to a simmer. Let the rice cook for 15 to 18 minutes, until the rice is tender. Turn off the heat and allow it to sit for 5 minutes, then fluff with a fork.

ONE PAN RICE MEAL RECIPE - MEXICAN RECIPES - OLD EL PASO
Throw in the vegetable chunks, stir it up and leave to cook for 2 minutes. Toss in the seasoned rice and give it a good stir for 1 minute. Pour in the sauce pouch, add the spice mix and 350 ml of water to the pan and stir. Bring to the boil then reduce to a medium heat and leave to simmer for 10 minutes, stirring gently from time to time.
