Perfect to share, this full-flavoured burrito is bursting with mince, beans and melting cheese.

1/2 tablespoon vegetable oil
250g beef mince or spicy sausage
1 tin (395g) mixed beans in mild chilli sauce
1 teaspoon ground cumin
4 Old El Paso™ Super Soft Large Flour Tortillas
200g Mexicana or Cheddar cheese
1/2 jar (344g) Old El Paso™ Cooking Sauce for Enchiladas
175g soured cream
Shredded lettuce

Steps:

  • Preheat the oven to 190ºC (170ºC for fan assisted ovens), gas mark 5. Line a large shallow baking tray, about 38cm x 25cm, with greaseproof paper.
  • Heat the oil in a large frying pan over a medium-high and cook the mince for 5 minutes, adding in the cumin for the last minute. Add in the beans and cook for a further 3 minutes.
  • Place the tortillas, overlapping, down one side of the baking tray. Soon the mince mixture down the centre of the tortillas, then sprinkle with half the cheese. Roll the tortilla over the sausage mixture to create 1 large burrito, seam side down. Tuck the ends under. Spoon the enchilada sauce over the burrito, then sprinkle with the remaining cheese.
  • Bake for 20 minutes or until piping hot and the cheese is melted and golden. Cut into slices to serve alongside the soured cream and lettuce.

This no-fuss burrito is a quick and tasty meal when you want to spend more time with your loved ones and less time in the kitchen.

6 Old El Paso™ Super Soft Large Flour Tortillas
Old El Paso™ Refried Beans
Old El Paso™ Mild Thick N Chunky Tomato Salsa
250g cooked rice
500g shredded leftover cooked chicken
250g grated cheese
1 ripe avocado

Steps:

  • Pierce the soft flour tortillas package and warm it in the microwave for 35-45 seconds.
  • Using the back of a spoon, spread a thin layer of the refried beans over each tortilla, almost to the edge. The refried beans help to hold the ingredients and tortillas together.
  • Add cooked rice, again spreading with the back of a spoon, leaving a gap of about 3cm from the edge of the tortilla.
  • On top of the rice, add sliced avocado forming a rectangular shaped “column”. Fresh ingredients like lettuce, red cabbage, or tomato work great, too.
  • Use a fork to shred the leftover chicken into bite-sized chunks and layer on top of the column of avocado.
  • Alternatively, to prepare uncooked chicken, place oil in large frying pan over a medium heat, add the chicken and cook until the meat is golden in colour no longer be pink inside.
  • Spoon a dollop of salsa on top of the chicken and sprinkle grated cheese on top of the salsa.
