DRIED FRUIT AND NUT BISCOTTI RECIPE - FOOD.COM

Dried Fruit and Nut Biscotti Recipe - Food.com image

I found this recipe in a magazine years ago and use a different combination of nuts and fruits every time I make it, but dried apricots and pistachio nuts work well here. You might need to adjust the baking and drying times, depending on your oven. Enjoy!

Total Time 1 hours 50 minutes

Prep Time 20 minutes

Cook Time 1 hours 30 minutes

Yield 30 biscuits

Number Of Ingredients 7

7 tablespoons flour
5 tablespoons sugar
1 teaspoon baking powder
1 pinch ground cloves
1 teaspoon cinnamon
3 eggs
400 g mixed nuts and dried fruit (cut up but not too small)

Steps:

  • Sift the dry ingredients into a bowl.
  • Add eggs, nuts and fruit.
  • Mix well.
  • Put into a greased loaf pan and bake on 180 degrees for about 40 minutes.
  • Cool and turn out of pan.
  • Slice loaf as thinly as possible and layer on large oven tray.
  • Reduce oven to low temperature and place tray in oven to dry out biscotti for approximately another 40 minutes.

GHIRARDELLI CHOCOLATE NUT BISCOTTI RECIPE - FOOD.COM

Ghirardelli Chocolate Nut Biscotti Recipe - Food.com image

These are delicious Chocolate Biscotti's with a hint of coffee flavor. So good with a cup of coffee or a glass of wine. The recipe comes from Ghirardelli Chocolate. Enjoy

Total Time 1 hours 5 minutes

Prep Time 25 minutes

Cook Time 40 minutes

Yield 35 Biscotti

Number Of Ingredients 10

2 large eggs
2 tablespoons instant coffee
1 teaspoon vanilla
2 cups flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup butter, softened
3/4 cup granulated sugar
1 cup almonds, sliced (or chopped)
4 ounces bittersweet chocolate, baking bar chopped (I have used unsweetened baking chocolate)

Steps:

  • Preheat oven to 325°F.
  • Lightly grease and flour large baking sheet (I sprayed with Pam).
  • In a small bowl, stir the eggs, instant coffee and vanilla until well blended; set aside.
  • In a medium bowl, mix flour, baking powder and salt; set aside.
  • In a large bowl, beat the butter and sugar with an electric mixer on medium speed until light and fluffy.
  • Beat in egg mixture.
  • Gradually add the flour mixture, beating well after addition.
  • Stir in chocolate and nuts.
  • Divide the dough into 2 equal portions.
  • On a lightly floured surface, shape the dough into 2 logs, each 14" long, 1-1/2" wide, and 1" thick.
  • Place the logs on baking sheet.
  • Bake for 25 minutes or until lightly browned.
  • Set the baking sheet on a wire rack to cool 10 minutes.
  • Remove the logs to cutting board (I usually just cut them on the cookie sheet). Cut with serrated knife, cut diagonally into 1/2 inch thick slices.
  • Place slices 1/2 inch apart upright (not on sides).
  • Bake 12 to 15 minutes or until slightly dry.
  • Remove to rack to cool.
  • I leave mine on cookie, let cool.
  • Then drizzle with melted chocolate (I melt chocolate in microwave).
  • The chocolate is just my addition - so good with a cup of coffee.
  • Store biscotti in air tight container.

THE BEST ALMOND BISCOTTI RECIPE - FOOD.COM
I don't know where my mother got this recipe but it produces the best biscotti I have ever had- and I am Italian so I have eaten A LOT of biscotti. Also, I will be publishing the chocolate version of this recipe which is also to die for. I've also made these with 1/4 cup dark chocolate chips and 2/4 cups hazelnuts in place of the almonds. For a sweeter variety, I have also mixed 1/2 cup almonds with 1/4 cup butterscotch chips. I have also made them plain without nuts when I've been low on ingredients. You can't mess up this recipe- it's fool-proof!.

Let cool on a rack to room temperature. Place cookies in an airtight container.

On a lightly floured surface, divide dough in half and roll into two rough 33cm (13in) sausage shapes. Place on lined sheet, spacing apart. Bake for 20-25min until dough is lightly golden and has spread, then cool for 10min on a wire rack. Turn down oven to 140°C (120°C fan) mark 1.

Using a bread knife, cut rolls diagonally into 1cm (½in) thick slices. Lay flat on baking sheet. Bake for 15min until dry and lightly golden - they'll harden on cooling.

Cool completely on wire rack, then store in an airtight tin for up to one month. Present in boxes or bags.
