The best mutton biryani recipe, learn how to make mutton biryani in pressure cooker.

250 gm Goat/Mutton (0.5 LB)
1.5 cup Basmati rice
1 cup Onion (sliced)
1/2 cup Tomato (sliced)
2 tbsp Ghee
2 tbsp Oil
1 Bay leaf
4 Cloves
1 inch Cinnamon stick
2 Star anise
2 Cardamom
2 tbsp Ginger and garlic paste
1 handful Mint leaves
1 handful Coriander leaves
1/4 cup Curd
2 Green chili
1 tsp Peppercorns
1/4 tsp Turmeric powder
2 tbsp Red chili powder
1 tbsp Coriander powder
1 tbsp Garam masala
1 tsp Roasted cumin powder
3 cup Water
to taste Salt

Steps:

  • Clean the goat/mutton with salt and turmeric and set aside.
  • Wash and soak the basmati rice for 30 minutes.
  • Heat a pressure cooker and add ghee and oil.
  • Once the oil is heated add the whole garam spices one by one (Bay leaves, cloves, star anise, cardamom, cinnamon stick, peppercorns).
  • Add the green chili and sliced onions and fry till it is golden brown in color.
  • Add the sliced tomatoes and sauté it for 2 minutes and then add the ginger and garlic paste.Then add the mutton/goat pieces and give it a mix.
  • Now add the spice powders one by one (Turmeric powder, red chili powder, coriander powder, roasted cumin powder, garam masala).
  • Add the chopped mint leaves and coriander leaves.
  • Add the required salt and curd.
  • Give it a quick mix and add the 3 cups of water to it and pressure cook it for 6-8 whistles.
  • Once the pressure is settled remove the cooker lid and add the soaked basmati rice and close the lid and allow it to cook for another 2 whistles.
  • After 2 whistles switch off the flame and allow it to rest for 20 minutes.
  • Then you can open the pressure cooker and transfer the biryani to the serving plate.
  • Enjoy the biryani with raitha or your favorite curry.
